Curry Plantain Salad

Aris’s Recipe for 1 person (given to me by my dear friend)
1 T curry powder
1 cup fresh dill weed
1 kiwi peeled and diced
2 T lime juice
1 1/2 cup ripe plantains, she suggests you wait until they are black
2 medium scallions, minced
1 cup red bell pepper, minced
6 sundried tomatoes, soaked
1 T extra virgin olive oil
1 T balsamic vinegar
Chop all veggies and fruit and add dressing. Salt if needed:)
