Day #69 Salpicao Salad and “Fried” Jicama pg. 155 entertaining in the raw

Tonight’s meal looked just like we went to a restaurant and ordered a gourmet raw meal.  It looked so beautiful!

Dressing Ingredients

1 1/2 cups cashews, soaked 1-2 hours

3/4 cup olive oil

1/4 cup coconut meat

1/4 cup water

1 t salt

1/2 t cumin

2 t lemon juice

2 T agave

Vegatables Ingredients

2 cups thinly sliced shiitake mushrooms

olive oil

2 T lime juice

3/4 cup green olives ( I used black, not raw)

1 cup corn

4 cups julienned carrots

3/4 cup raisins, soaked 20 minutes

1/4 cup parsley

Jason really liked tonight’s dinner.  I had a few bites.  It was like fine dining.  I love when he is home so I can make him dinner:)

I’m going to sit on the couch and soak my feet.  I haven’t done that in a while.  I will probably fall asleep pretty fast.  I woke up early this morning and went to work.  I think I am going in early tomorrow too. I would rather go early tomorrow and work a few hours then go in Sunday and work a few hours.

Today was a great day.  A day with unexpected occurances.  I got out early from work, so Jason and I went for a walk at the park.  Just like old times.  We always used to walk together while the kids were at school.  Lately we have both been so busy, so today’s unexpected visit was a breath of fresh air!  I also went for a walk with my boys this evening.  We went down by the lake with the dogs and went to the park and went on the swings.  On the way home I saw a fig tree that actually had beautiful figs on it.  I was so excited, I want one for my yard.  Maybe I will get one tomorrow.
