Herbed Sunflower Seed Dip/Spread and Blueberry and Fig Salad brought by Teresa

Herbed Sunflower Seed Dip or Spread
1 cup raw sunflower seeds (soak for at least 2 hrs or overnight)
1-2 T lemon juice
2-3 T chopped Italian Parsley
1/2c basil leaves
1-2 T nama shoyu or tamari (I’ll use Liquid Braggs)
1-2 cloves or garlic, minced
freshly ground blk pepper, to taste
Drain sunflower seeds (reserving water in case you need it) and put into food processor or high speed blender with remaining ingredients. Process until smooth, scraping down the sides as you need to. Add some soaking water, if necessary, to make it spreadable. Let sit at least 20 min’s. Serve on top of cucumber slices or wrapped in lettuce leaves with sprouts and tomato.
Blueberry & Fig Salad
2 cups fresh blueberries, picked over, rinsed, and patted dry
4 fresh figs, washed and quartered
1-2 T organic sugar or maple sugar
1/4 t freshly grated nutmeg
1 t finely grated orange zest
Optional 1/2 T Grand Marnier
Combine the blueberries, figs, sugar, nutmeg, grated orange zest and Grand Marnie in a medium bowl. Mix gently. Set aside at room temperature for at least 30 minutes up to 6 hrs.
