Serves 2-4

1 1/2 cups chick peas (garbanzo beans)

3/8 cup tahini

3 lemons

1 T tamari

1/4 cup olive oil

3 garlic cloves

First soak chick peas in water for 36 hours.  This is very important.  If you soak them for less than 36 hours they will probably  still be very hard.  Ready your food processor with the “s” blade.  Process first the chick peas for  about a minute.  With the processor still running add the tahini.  Next chop the garlic finely and add it to the processor which is still running.  Now add the tamari and olive oil.  Squeeze the juice out of the lemons (no seeds) and add it to the mixture.  Finally, with all ingredients added, process for a couple more minutes.  Hummus may require up to ten minutes in the food processor.  It is important that a homogenous paste-like consistency is achieved.
