Peanut Sauce with Zucchini Noodles and Vegetables

3 or 4 zucchini peeled and made into angel hair with a spiral slicer. Should make approximately 6 cups of noodles;

Sprinkle salt over zucchini pasta and place in a collander to allow excess water to drain.

1 large red bell pepper, julienned
2 broccoli, mung, alfalfa sprouts or other sprouts of your choice
3 cups broccoli, chopped small
½ cup purple onions, sliced thinly
2 cups shittake mushrooms, sliced
1 T Braggs
1 T sesame oil
2 t lime juice

Peanut Sauce
1/4 cup tahini
1/4 cup raw almond butter
2 garlic cloves
1 T fresh ginger root, grated
2 T Braggs
1 T raw sesame oil
1 T apple cider vinegar
1/2 T honey or agave
1/2 t cayenne
3/4 cup water

Blend all ingredients in high-speed blender until smooth. Add water until desired consistency.

In a large bowl, toss veggies except marinated mushrooms in some peanut sauce, cover and allow flavors to blend in the dehydrator at 110 degrees for at least an hour. (Longer if not using the dehydrator.
Just before serving, add zucchini noodles and drained marinated mushrooms to the veggies.
