Red Pepper Hummus
From Matthew Kenney’s book Everyday raw
2 cups red pepper, dehydrated overnight (do this before getting other ingredients ready
2 cups seeded and chopped red bell pepper
2 cups cashews, soaked 1-2 hours
1 cup macadamia nuts, soaked 1-2 hours (I used cashews)
1/2 cup lime juice
3 T olive oil
1/2 cup raw tahini
1 t sea salt
1 1/4 cup water
I dehydrated the peppers overnight (at 115). I threw everything in the Vita-mix. The flavor is so rich. I love it! This recipe is my favorite by far for a bean-less hummus.
