Crunchy Pea Salad brought by Joanne Hopton

10 oz. baby peas

1 cup diced celery

1 cup chopped cauliflower

1/4 cup diced green onion

1 cup chopped cashews

1 can water chestnuts

1/2 cup sour cream (recipe below)

1 cup maynonnaise (recipe below)

dash curry

Combine all ingredients. Chill.

Sour Cream

1 1/2 cups cashews

1 T apple cider vinegar

1 t white miso

1/2 cup water

1/2 t Himalayan salt

Mayonnaise

2 T avocado

1 1/2 T apple cider vinegar

2/3 t Himalayan salt

3/4 cup olive oil
