Day #81 Lime-Spiced Mango Chutney pg. 192 entertaining in the raw

Last night I was not myself at all. I kinda skimped on the recipe making, but tonight was different. I made the mango chutney. It is surprisingly filled with flavor. I could taste all the ingredients separately. I only had a small bite, and could taste all the flavors take turns in my mouth. I am waiting until tomorrow, to have the entire dessert. Tomorrow is the vanilla cream and Jason and I will eat the dessert TOGETHER tomorrow. I really don’t think my kids will like it but we will have them try it.
Last night they all liked the limeade. Christian drank his in the shower. He is so funny. He is always doing crazy things like that. He loves to be different.
Tomorrow, we will celebrate my kids’ achievement in Kumon at their award ceremony, and Jason and I will have a yummy raw dessert when we get back. We will also celebrate his passing another Nursing exam. He has been studying all night. He works so hard. I am so proud of him!!
I am going to relax tonight and then go to bed. I will be studying all day tomorrow, while the kids are at school. My test on the bones is Monday night. I went out tonight and bought a skeleton to study the bones. I am getting better at naming the individual bones. Now I have to focus on the physiology. I am having fun with it though. I love the challenge and the accomplishments.

Lime-Spiced Mango Chutney ingredients
Frozen Mango
agave
lime juice
ancho chile powder
cayenne
lime zest

I let the mango thaw on the way home and let it sit out on the counter. I didn’t have to put it in the dehydrator. I placed all the ingredients in the food processor and pulsed it a few times, then it was done. It is now waiting in the refrigerator until tomorrow evening!
