Day #84 Portobello Fajitas pg. 96 everyday raw

Ingredients

3 portobello mushroom caps, cut into 1/2 inch slices
1/2 cup olive oil
sea salt
2 red bell peppers (I used the mixed mini peppers)
1 small red onion
2 cups baby spinach
1 clove garlic ( I used 3, I LOVE GARLIC)

What a quick recipe. I went shopping at Publix tonight for all the ingredients. I didn’t make it to Rutabaga’s to pick up the peppers and spinach, so I had to run to Publix. Rutabaga’s didn’t have mushrooms, so I bought them at Publix, too.
The preparation for this recipe took only about 5 minutes. The shopping takes so much longer than the actual meal. One thing that I find myself doing is not reading the entire recipe, I am so used to working with raw recipes, I usually just look at the ingredients and go from there. Sometimes it gets me into trouble. But the recipes never turn out wrong, just not always how M.K. describes the process. Raw prep is so much easier than baking. When baking it is important to use exact measurements and even the order you put the ingredients together can effect how the recipe turns out.
Today was such a great day! The weather here in Florida was absolutely perfect. I woke up and the sky was clear and the wind was blowing crisp cool air. I love this time of year. I studied the bones at school and became more familiar with them. My test is on Monday. The only things I have been thinking about the last few days are the bones.
After studying with Jason, we went to the gym. I have been trying to make it to the gym at least 4 times a week. I have found my love again:). Weight training is in my blood. I just got away from it for a while, but I am back and feeling better than ever! After the gym, I studied more at Papa Johns. I love that I can go hang out with Jason throughout the day. He surprised me this evening and got out early, so we walked downtown from the bike trail, while Sabby rode his bike. Christian didn’t get to go, he was at his friends house all day. My day was absolutely perfect! Wish all my days could be this way. I miss when my lover boy is not with me:(
Now I’m going to study some more. Have to be prepared for Monday night!
So my day was filled with exercise and studying. What an awesome way to spend a Saturday.
