Day #87 Cayenne-Cacao Syrup pg. 102 entertaining in the raw

October 20, 2009

agave
cacao powder
carob powder
vanilla extract
cayenne
sea salt
coconut oil

I made this syrup for the potluck. I am going to put strawberries and bananas on long skewers and pour on the sauce. I didn’t put the cayenne in it because I think it will be too spicy for some people. I am going to add the coconut oil before I pour in it on the skewers. I got the idea from our trip to Maryland. We stopped at a Godiva shop and I saw their skewers. They looked so beautiful. Hope mine will look just as beautiful, I know they will be better for me. :)

I am on the way to Orlando to see Trevor Hall again! I am exhausted from the gym. I did legs today and shoulders, with an hour of elliptical training. I am wooped. I am sure I will get energy when I get to House of Blues. All of my family are going so it will be memorable. Cathy bought us tickets for our birthday presents. She is the best sister ever!

Day #86 Amaretti pg. 171 entertaining in the raw

October 19, 2009

I did it! I passed my test! I don’t know what grade I got, but I know I did good. I felt like I was celebrating tonight. I told Jason I am going to act like I am going to a party, and I will not be nervous. I showered and even straightened my hair for it. Well, really I did it because I was home all day with my sicky baby, Sabby. I had time to actually straighten my hair. I went into the test knowing that God put this in my heart to do what I am doing, so I was not nervous, but very focused. I think it was probably worth about 180 points (that is what I heard someone say). It was a long test. But I feel like the more I study the stronger my brain becomes, if that makes sense. I wasn’t as exhausted after studying so hard all week and having a 2 hour test. I will find out on Wednesday what my grade is.

I decided to make the amaretti today, I am going to bring it to the Potluck this Thursday night. It was quite easy to make, but I made the biggest boo boo, I used agave in it because I thought it said to use Maple Syrup but it really called for maple syrup powder:( I still need to order it. Foo.

They came out great though. I didn’t taste them, but the consistency was easy to work with. I made almond flour in the vitamix then put it in a bowl. I added all ingredients and mixed it up. It was near the consistency of pancake batter.

I used a tablespoon to make the cookies. I ended up making 20.

I put the mixture on the parchment paper, then flattened them with the measuring spoon.

They are in the dehydrator for 24 hours.
This is going to be a beautiful presentation. Pumpkin Jicama Risotto and mushrooms go on top of these amaretto flavored cookies. Gosh I love Matthew Kenney, his creations are so much fun. I never imagined putting a recipe like this together. His creations are so different from other recipes.
Amaretti Ingredients
2 cups almond flour
1/2 t almond extract
date paste
1/2 cup maple syrup powder
1/2 cup coconut oil
sea salt

Hope the gathering goes well, with these special treats.

Day #85 Portobello Sausage pg. 60 everyday raw

October 18, 2009

I soaked the nuts and seeds last night, so they would be ready for this morning. I cut up the eggplant and mushrooms first and marinated them with olive oil, braggs liquid aminos, apple cider vinegar.
Matthew Kenney Project Oct 18 and on 001 (Small)
Then I strained the pumpkin seeds and almonds in a colander then processed them, and placed them in a bowl.
Matthew Kenney Project Oct 18 and on 002 (Small)Matthew Kenney Project Oct 18 and on 003 (Small)
I placed the remaining ingredients into the food processor then put them with the almond and pumpkin seed mixture. The mixture was not as wet as I thought it was going to be when I was making the sausages. I thought they would fall apart when I tried to take them out of the dehydrator but they came out fine.
Matthew Kenney Project Oct 18 and on (Small)

Portobello Sausage Ingredients

olive oil
nama shoyu (braggs)
umeboshi plum sauce (I couldn’t find)
apple cider vinegar
portobello mushrooms
eggplant
almonds
pumpkin seeds
coriander
scallions
garlic
parsley
sea salt and pepper

These turned out ok, I think they are too bitter. I don’t think they taste like sausage at all:( it could be because I didn’t have the plum paste, but I am doubtful. Maybe I could crumble them up and put them on fajitas. Fajitas were my lovely breakfast this morning. I had the fajitas on the tortillas. Now this was an awesome breakfast. I am so fortunate to make the best food in the world and have whatever I want for each meal.

I am off to bed, my test is tomorrow, I need my rest! Hope to do great on it. I feel like I studied as much as I possibily could. I am looking forward to it. I am prepared!

Day #84 Portobello Fajitas pg. 96 everyday raw

October 17, 2009

Ingredients

3 portobello mushroom caps, cut into 1/2 inch slices
1/2 cup olive oil
sea salt
2 red bell peppers (I used the mixed mini peppers)
1 small red onion
2 cups baby spinach
1 clove garlic ( I used 3, I LOVE GARLIC)

What a quick recipe. I went shopping at Publix tonight for all the ingredients. I didn’t make it to Rutabaga’s to pick up the peppers and spinach, so I had to run to Publix. Rutabaga’s didn’t have mushrooms, so I bought them at Publix, too.
The preparation for this recipe took only about 5 minutes. The shopping takes so much longer than the actual meal. One thing that I find myself doing is not reading the entire recipe, I am so used to working with raw recipes, I usually just look at the ingredients and go from there. Sometimes it gets me into trouble. But the recipes never turn out wrong, just not always how M.K. describes the process. Raw prep is so much easier than baking. When baking it is important to use exact measurements and even the order you put the ingredients together can effect how the recipe turns out.
Today was such a great day! The weather here in Florida was absolutely perfect. I woke up and the sky was clear and the wind was blowing crisp cool air. I love this time of year. I studied the bones at school and became more familiar with them. My test is on Monday. The only things I have been thinking about the last few days are the bones.
After studying with Jason, we went to the gym. I have been trying to make it to the gym at least 4 times a week. I have found my love again:). Weight training is in my blood. I just got away from it for a while, but I am back and feeling better than ever! After the gym, I studied more at Papa Johns. I love that I can go hang out with Jason throughout the day. He surprised me this evening and got out early, so we walked downtown from the bike trail, while Sabby rode his bike. Christian didn’t get to go, he was at his friends house all day. My day was absolutely perfect! Wish all my days could be this way. I miss when my lover boy is not with me:(
Now I’m going to study some more. Have to be prepared for Monday night!
So my day was filled with exercise and studying. What an awesome way to spend a Saturday.

Day #83 Golden Tortilla Chips pg. 51 everyday raw

October 16, 2009

When I started making this recipe I felt like I made this before. I think that I have, but I can’t remember when or where I got the recipe. Christian helped me tonight with the measurements. I love his help in the kitchen. I think he will be the best cook ever one day! I know he enjoys preparing food, just as much as I do. I started making food at his age. It was macaroni and cheese, salad and toast, but hey it was a start.

I decided to make this recipe so I could have the fajitas tomorrow night or Sunday night. The recipe sounds so good. I decided not to make the Tortillas round, I felt like having squares. I prefer squares most of the time. Even my diamond on my engagement ring is square (princess cut), although I don’t wear it. I don’t support the diamond industry. I would never have chosen a diamond for the engagement ring, if I would have known what blood is shed for them. Sorry for the subject change, I know I do that alot. I used my new spatula. I love that thing. Gosh it is such a breeze to spread any batter out now that I have it. I am grateful for it!

The tortillas need to be scored where I want the cuts to be. I am waiting for 30 minutes according to the directions, then I will mark them.

Golden Tortillas Chips Ingredients
flax meal
frozen corn (M.K. says that frozen is better than fresh)
water
olive oil
cumin
red onion
garlic
salt
lime juice
cayenne (oh no :(, just realized I forgot this)
chili powder

This rings true in my being. I am always trying to make each day a better day than the day before. I know that I can make each and everyday the best ever! It is only up to me!

Day #82 Vanilla Cream pg. 192 entertaining in the raw

October 15, 2009

Well, I finally completed this marvelous recipe. I have to say, it was the best dessert I’ve had all week. Yummy! The flavors mixed together were a perfect blend. I adore chocolate and lime together. It is so refreshing to me. I wonder what a chocolate key lime pie would taste like? I should try it sometime. Or chocolate covered key lime bars. Maybe I will try to create this.

Jason and I sat down together on the couch and enjoyed this dessert together (while watching football, he loves football, especially the Gators!) This vanilla cream would make a wonderful ice cream. I didn’t wait to cool this in the refrigerator, so it was watery, but ooohhh soooo delicious! I love the flavor of vanilla and cinnamon. It is such a simple recipe but yet tastes so decadent. Especially with the 3 desserts together. What is so great is I could have all 3 of them on different days and they would all taste amazing separately or together.

Vanilla Cream Ingredients

cashews
coconut meat
raw agave
water
vanilla
coconut oil
cinnamon
cayenne
salt

Day #81 Lime-Spiced Mango Chutney pg. 192 entertaining in the raw

October 14, 2009

Last night I was not myself at all. I kinda skimped on the recipe making, but tonight was different. I made the mango chutney. It is surprisingly filled with flavor. I could taste all the ingredients separately. I only had a small bite, and could taste all the flavors take turns in my mouth. I am waiting until tomorrow, to have the entire dessert. Tomorrow is the vanilla cream and Jason and I will eat the dessert TOGETHER tomorrow. I really don’t think my kids will like it but we will have them try it.
Last night they all liked the limeade. Christian drank his in the shower. He is so funny. He is always doing crazy things like that. He loves to be different.
Tomorrow, we will celebrate my kids’ achievement in Kumon at their award ceremony, and Jason and I will have a yummy raw dessert when we get back. We will also celebrate his passing another Nursing exam. He has been studying all night. He works so hard. I am so proud of him!!
I am going to relax tonight and then go to bed. I will be studying all day tomorrow, while the kids are at school. My test on the bones is Monday night. I went out tonight and bought a skeleton to study the bones. I am getting better at naming the individual bones. Now I have to focus on the physiology. I am having fun with it though. I love the challenge and the accomplishments.

Lime-Spiced Mango Chutney ingredients
Frozen Mango
agave
lime juice
ancho chile powder
cayenne
lime zest

I let the mango thaw on the way home and let it sit out on the counter. I didn’t have to put it in the dehydrator. I placed all the ingredients in the food processor and pulsed it a few times, then it was done. It is now waiting in the refrigerator until tomorrow evening!

Day #80 Raspberry Agave Lemonade pg. 34 everyday raw

October 13, 2009

I planned on making my beautiful continuation of last night’s dessert, but unfortunately I am feeling ill. Some type of stomach virus maybe. I have been fine on and off all day. I did go to work, school, and I even worked out at the gym. This morning I was not feeling well, and now tonight it seems to be getting worse. No throwing up though:) I am going to make this a short blog then head to bed.
I made raspberry lemonade, well, I should say, limeade because I couldn’t get a hold of any lemons. This was the quickest thing I could make so I could get to bed. I feel like I’m cheating myself, but Jason went to the store and he could only get limes. So I will make due. I personally like the flavor of limes and raspberries. D’Adjoa made raspberry lemonade at the last potluck, and I do prefer lime. But I will redo this recipe with lemons to see how M.K.’s recipe is.

Ingredients
lemons (I used limes for lack of lemons)
agave
water
raspberries

I will not try until tomorrow because I am not in the mood to even look at food. But I did! Goodnight!

Day #79 Chocolate Ancho Chile Tarts pg. 192 entertaining in the raw

October 12, 2009

Tart Filling Ingredients

Cashews
water
agave
coconut oil
vanilla extract
sea salt
cocoa powder
ancho chile powder

Cookie Crumb Flour (For Tart Crust)
cocoa powder
oat flour
maple syrup
agave
coconut oil
sea salt
vanilla extract

I had cookie crumb flour left over for this tart, but I wanted to make it without a crust. I really don’t like crusts that much. I wanted to have the full flavor of just this spicy dessert filling. I have had one dessert that was spicy at a raw restaurant here in St. Augustine Florida. I really didn’t like it very much. I figured that M. K.’s recipe would be so much better.
I put all ingredients for the filling into the Vitamix and blended it up in less than 5 minutes. I tried some and WOW! My nose flared up. I tried it first without coconut oil, the spicy flavor was overpowering, but after adding the coconut oil the flavor became more mild.
It is an interesting combination. I can taste the chocolate but not the chile powder, the chile powder leaves a hidden spicy feeling. I can’t wait to have the tart with lime-spiced mango chutney and vanilla cream.
In the book. M.K. says that the creme cools down the kick of the ancho chile powder. I bought this powder in St. Augustine when I went with Jason for our Anniversary. I have never used ancho chili powder until tonight. Unless I used in one of the recipes I have done in the last 79 days. I don’t recall using it, anyway.
Tomorrow night, if I can get the ingredients I will make the chutney and vanilla cream.
Matthew Kenney Project 407Matthew Kenney Project 408
It will take a rare person to like this dessert. I really don’t know anyone that will fall in love with this dessert, but I am willing to let anyone try it. Maybe I can find someone. If not, I shall have it all to myself. Yummy!

I want to have a good body, but not as much as I want dessert. ~Jason Love

Day #78 Basil Raviolini and Summer Tomato Sauce pg. 29 entertaining in the raw

Raviolini Wrappers ingredients pg. 30

coconut meat
spinach juice
basil leaves
salt
black pepper ( I omitted)

Raviolini Puree Ingredients
almond meal
pine nuts
cashews
lemon juice
sea salt
nutritional yeast
olive oil
garlic scapes or young green garlic
fresh basil

The meal turned out so beautiful. lt is sitting at the table waiting to be eaten by the most gorgeous man on the planet….My Husband! The sauce turned out beautiful. I didn’t post the pic last night. So here it is..
Matthew Kenney Project 405I love that it is not red! It makes this dish look so unique.

The Puree is very light. I prefer to use the almond meal for the cheeses it makes the cheese lighter. Nutritional Yeast is always a nice addition even though it is not completely raw.
Matthew Kenney Project 406 The cheese looks similar to Ricotta Cheese. The texture and consistency is very similar too. Not as heavy as Ricotta though.
I can’t wait until Jason gets home. I know he will love it! I love that I am able to make him food. I can express my love for him through food, which is the way I grew up! Always serving, eating and expressing love by food. It is the Italian way:)
Matthew Kenney Project 404

This one of my favorite meals. I am going to make a pizza crust out of butternut squash and flax, then use the cheese and tomato sauce. Yummy! I love raw pizzas!
