Day #166 Rellenos Filling pg. 188 entertaining in the raw

When we went to Cafe 118 in Orlando, I had this meal. It was one of the best raw meals I have had in a restaurant. Needless to say, I am excited to make this entire recipe. I started today with the quickest part of the entire recipe, the rellenos filling. I was going to make the entire recipe, but I ate the empanadas. OH MY, that was one of the best meals I have made from this entire project! I ate 3 of them today. It was absolutely worth making and I will make them again.
Rellenos Filling Ingredients
fresh corn
zucchini
red pepper
tomato
red onion
jalapeno
cilantro
lime juice
cumin
cayenne
chili powder
black pepper
I used a small knife and chopped into fine pieces. The directions say to let sit 15 minutes before serving, but I think it will taste even better tomorrow.
I am going to go on a walk or to the gym. I haven’t been outdoors much lately due to cold weather. I am so thankful I live in Florida! I would rather be here!
