Day #77 Tomato Sauce with Heirloom Tomatoes pg. 29 entertaining in the raw

Sauce Ingredients
olive oil
chopped heirloom tomatoes
pinch of red chili flakes
salt and pepper
julienned fresh oregano (I used 1 T dry)
We had fresh Heirloom tomatoes at Rutabaga’s this week. I was so excited when I saw them. They were all so beautiful, in various sizes, shapes and colors. I absolutely love heirloom tomatoes. They always remind me of the Garden Of Eden. How beautiful all the food was in the Beginning! None of them look alike or taste the same. They are all very much their own design, unlike most tomatoes in the store, which are mostly the same shape, size, color and texture.
Sebastian loves Tomatoes, he tried the green one. The flavor was not the same as those cherry or grape tomatoes that he likes. He will like them one day!
I had to cut up and marinate the tomatoes in olive oil. They will be blended after they are dehydrated for 2 hours.
It’s always a shame when I have to blend them in the blender, I can’t see the beautiful colors separately, but the sauces always taste so pure.
Tomorrow will be the Raviolini Puree. Yummy. I’ve been hungry for Italian food!
