Day #185 Pine Nut Filling pg. 26 entertaining in the raw

Well today is officially my 6th month anniversary for this project! I am going to celebrate at the Gathering tonight! I am bringing 6 recipes I have made from this project! Funny, how that worked out, I am bringing 6 recipes, I guess in honor of the months I have slaved over the hot “dehydrator”! Just kidding! This has really been one of the most remarkable and memorable things I have done. I have not missed a day yet!

I made the pine nut filling for the recipe that I will continue to make tomorrow:) Tomorrow, I am going to write about the top recipes that I have made in the last 6 months. Time is short, but I wanted to get this in for today.

Filling Ingredients
pine nuts
lemon juice
salt
nutritional yeast
scallions

All ingredients were blended in Vita-mix.

Day #184 Sauce for Spinach and Beet Ravioli pg. 150 entertaining in the raw

After thinking about what to do with this recipe I decided to not use the wine sauce for the raviolis. I know that I will be serving this to many people that would like to stay clear away from alcohol. I substituted fresh white grape juice for the white wine. I know that the last time I used wine I felt funny after using it. I just have never been able to handle wine. I did try this sauce and it tastes delicious. The blend of pears, grapes and agave is divine. I am sure the sauce with wine would be a beautiful blend if wine was one of my favorite flavors, however, it is not. I figured white grape juice would be the closest thing to white wine.

I am guessing that all wine connoisseurs are shaking their heads, because I think white grape juice would be acceptable in place of wine. I have always wanted to learn more about wine, but honestly I really don’t have room for it in my life right now. I always feel strange when I do drink it, so I like to learn about things that I can benefit.

Needless to say I feel bad that I didn’t follow the recipe exactly. I haven’t exactly followed all of the recipes to a T. For example, I have replaced agave for maple syrup in numerous recipes. But I feel bad about this one for some reason. Anyway, the dressing is really good.

Sauce Ingredients
2 1/2 apples, peeled cored, and chopped
1/4 t salt
1/4 cup raw agave
1/2 cup white wine (I replaced it with white grape juice)

I blended all ingredients in the Vitamix and placed it in a glass jar until tomorrow’s potluck.

It feels so good to be done with this recipe. I wanted to complete this for many weeks. Now I can share it with all my friends tomorrow.

Day #183 Hot Fudge pg. 128 everyday raw

I had to look on my website to see if I made this recipe already. It seems as if I did, but it is not marked in my book as finished. I usually write the date that I made the recipe or I write done. I chose this for simplicity and the children love chocolate. Christian is actually hooked on almond milk, banana, and raw cacao. Like I said, I think he really changed alot from seeing David Wolfe’s lecture!

Hot Fudge Ingredients
agave
raw cacao powder
carob powder
vanilla extract
sea salt
coconut oil (I had to use cacao butter)

All ingredients were blended in Vita-mix.

I am looking forward to this week. The Gathering is on Tuesday. I am hoping that it will be successful! I miss seeing everyone. It will be exhilarating to see everyone. It always gets me charged up to eat raw!

I worked today, did some cardio and I did yoga. Yoga was needed. I love to feel the curves of my body. It makes me more in touch with my temple. I also asked Jason to order a hoola hoop for me. He ordered it last night, before I went to sleep. I can’t wait to play with it. Jason also ordered me herbs from MountainRoseHerbs.com. I ordered Nettle, Spearmint, Red Clover and Comfrey Tea. These were all recommended on Susun Weed’s website. I just borrowed one of her books from the library, but it is for pregnancy. I am sure I will learn something from it. Now I am going to do my homework and do some reading for A&P 2.

Day #182 Black and White Tofu Complete Meal pg. 58 entertaining in the raw

I made the complete meal today. The recipes that I did make were Mushrooms (I didn’t have enoki mushrooms or trumpet mushrooms) and Broth. Jason really loved the meal. I didn’t include the white asparagus because we couldn’t find it at the store. We bought it at Target last time in Orlando. We really didn’t care for the flavor of it, anyhow. The meal had a strong ginger and sesame flavor. The sweetness of the tofu worked perfectly with the dressings. The texture of the tofu is similar to a paste. It melts in your mouth unlike the soybean tofu that we buy sometimes. The texture is similar to silken tofu. Jason did enjoy it and he actually asked for more:) I tried a bite, but I was more in the mood for chocolate. So I ate some chocolate.

Mushrooms Ingredients
1 cup enoki mushrooms (I substituted cremini)
2 T sesame oil
1 t nama shoyu
sea salt

Mushrooms marinated for 1 hour. Then I put them on top of the meal.

Broth Ingredients
1 cup water
1/2 cup nama shoyu
2 T dried dulse
1 T wakame
1/4 cup miso paste

I combined all ingredients. Placed in dehydrator and strained. I only added a little to the dish, because of the saltiness.

I added the cremini mushrooms to the salad dressing I made two nights ago. This dressing is my favorite part. I am addicted to ginger right now.

I am sure Jason will be enjoying this meal for the next few days. I really think it turned out beautiful:) I love the way black sesame compliment the dish. The recipe didn’t call for scallions but I added them anyway. The color green always goes well with black and white.

I had such a perfect day today! Sabby played like a superstar at soccer. He kicked hard, played hard and even used his head numerous times to stop the ball. The team lost but I really think he played the hardest he ever has! I am very proud of my baby:)

We went on the kayaks today for 3 hours. The weather was cool, windy, and sunny. It was a perfect day to kayak. We crossed the entire lake and went to my favorite spot on the lake between my trees. While Jason and I sat and watched two dogs play in the water, our boys went and found some shrimp and fish. I miss it there. I haven’t been there for weeks. The weather has been too cold and rainy. I will go back again soon. I would have stayed there longer but it was getting late, so the boys returned the shrimp and fish back to the lake and we headed back home. Christian was my partner on the kayak today. On the way back we really had to paddle to not be pushed back by the wind. We counted how many strokes we took. He had me laughing hysterically, he was acting like an aerobics instructor. He makes me laugh! I love my boys and love our days together!

We are going to play Wheel of Fortune on Playstation now, so this is Goodnight!

Day #181 Black Tofu pg. 58 entertaining in the raw

Well, my plan was to make the entire meal tonight, but I didn’t get to make the black tofu until almost 9pm. Oh well! AND it is not even black:( It looks grey and spotted as you can see from the pictures. It doesn’t even resemble MK’s pics but there is one good thing..it is delicious! Tomorrow it will be done and the entire meal will be eaten by my hubby and I:) I think Christian will like the tofu, but without the mushrooms. I love this version of tofu, it sure beats soy.

Black Tofu Ingredients
1 cup cashews, soaked 1-2 hours
1/2 cup fresh young Thai coconut meat
1/2 cup carageenan (irish moss and water)
1/4 cup water
1/4 cup black sesame paste (I used black sesame seeds, I should’ve used more I guess to make it darker)
1/4 t sea salt

All ingredients were blended in Vita-mix. I lined a glass pan with plastic wrap, I just recycled the wrap from last night. It is in the refrigerator hardening now. Yummy!


Jason is off tomorrow night, so maybe we can actually sit down together as a family:)

Day #180 White Tofu and Mushroom Salad Dressing pg. 58 entertaining in the raw

I got an A on my hormone test in Anatomy and Physiology 2 class! I can’t believe it. I am ready for this semester now. It was kind of like a nudge for me to get started studying and be strong! I can get through this. I am dreaming awake. I love this lifestyle and I want to always live like this, FOREVER, but to a higher power:)!

I realized a few things today..
1. I want to be a party starter. I don’t like to do clean up. This analogy came to me today in class. I feel like many people want to help people when they are sick, I want to be on the other end of it. I am on the wellness side. The beginning of the party and during the festivities, if you know what I mean. I have never been good at the clean up crew at a party. I know my family can vouch for that.

2. I feel like my life is consistent with inconsistency. I feel amazing most of the time, but sometimes I don’t. I feel like there is always something in this Universe pushing me to be a positive person, and do positive in the world. Sometimes I get away from that and turn inward and self reflect. I think that I do a little self healing then I can go out and heal others.

I am learning so much about myself. I feel like I am finally taking time to see the real me. I am happy!
And I did start making one of the raddest meals tonight. It is going to be so beautiful!

White Tofu Ingredients

1 cup cashews, soaked 1-2 hours
1/2 cup fresh young Thai coconut meat
1/2 cup raw carageenan (soaked irish moss, and mixed with same amount of water in Vita-mix)
1/2 cup water
1/4 t salt

I put all ingredients into the Vita-mix then I lined a glass dish with plastic wrap and poured the mixture in and covered it in the refrigerator. It will be ready tomorrow.

Salad Ingredients

1 cup black trumpet mushrooms (I will use shiitake)
1 T white miso
1 t minced ginger
1 T sesame oil
1 T lemon juice
1 T raw agave

I mixed all ingredients, except mushrooms together in a bowl. I will put this dressing on mushrooms tomorrow.

I also soaked black sesame seeds for tomorrow’s black tofu recipe. I do not have black sesame paste, so I am making my own. Hope it works!

Day #179 Triple C pg. 26 everyday raw

Busy, Busy, Busy!! I haven’t stopped all day, well, I did go to the my new class at Unity. It’s called the Quest, and I did rest there. We did a beautiful meditation. I am very excited about this class, it a year long study, and it is getting to know God better:)

I made the Vitamin C drink this morning for Jason before his test. He got an A, I’m so happy for him. I would like to say the drink had something to do with it, but he is a Brainiac. This drink is delicious! I would love to make the same ingredients but with some irish moss:) Yummy, it would have the consistency of thick pudding.

Triple C Ingredients
1/2 cup goji berries
2 1/2 cup frozen mango
1/2 cup young coconut meat
6-8 oranges, juiced
2 pinches cayenne (optional)
1 pinch of salt

I also made my salad today to go with the spicy almond dressing. It was a huge salad and I ate it all and loved every minute of it. I sat outside and did get to enjoy a peaceful lunch, I forgot, so I did rest a little bit. I will make this dressing again!

The blue green salad called for ingredients that I didn’t have. So I made a red orange salad. I used lettuce, beets, carrots and rosemary flax croutons.

Day #178 Spicy Almond Dressing pg. 82 everyday raw

I just got back from the Gainesville Potluck and I would say it was another success. I enjoyed the company and the food. My favorite recipes were the carrot soup recipe made with 4 carrots, coconut water, 1 red pepper, garam masala and curry. I will make that soon. I also really enjoyed the coconut oil, cacao, and raisin mixture. Of course all recipes were amazing. Live food is so fantastic. I enjoy the high that I feel when I get around my raw food friends.

I finally saw a photo Theresa and Steve before “Raw Foods”…..

What a difference. You can see her in the photo she is holding, before Raw Foods. It was hard to believe that it was them in the photo. I am learning so much through Theresa. She is such a genuine person, and I learn something new from her every time I see her. Her and Steve are such loving people as are all the Gainesville Group. I hope they all come down to the Citrus County Raw Food Gathering next Tuesday:). We are going to have a special guest, Nancy Lee Bentley she is the author of Truly Cultured. I am really looking forward to her lecture and Theresa’s sauerkraut.

I came home and decided to make spicy almond dressing. I was going to make the cacao sauce for the bars, but the bars were still somewhat wet. I think I made them too thick. When I went to cut up the bars, they didn’t cut up well, they look crumbly. I will have to make the cacao sauce sometime soon. I still have to make the salad to go with this dressing today and the tomato salad to go with the green olive dressing that I made a few days ago. So tomorrow I will have a few things to make.

Spicy Almond Dressing Ingredients
almond butter
tomatoes
bragg’s liquid aminos
sesame oil
lime juice
maple syrup
miso
ginger
lemon grass (I omitted)
thai chiles
sea salt

All ingredients went into the blender. This dressing is delicious! I will have some tomorrow with the blue green salad.

Day #177 Super Goji-Cacao-Maca-Bars pg. 44 everyday raw

It was a nice treat to be in the kitchen making stuff tonight. I studied most of the day and I really was tired of studying so making these bars made me forget about “Hormones” for a few minutes. The recipe actually took about 15 minutes. I was moving rather slow and eating the nuts as I went along. BIG MISTAKE. I am living proof that you can gain weight on raw food. One day I am praying that raw food will change my weight, but until then I will struggle with too many nuts that make me “NUTS”. That is one goal I have this year, to lose some weight and continue to eat raw food. I really do think that preparing it is really my downfall, because I know how to do it well. It’s kind of a love/hate relationship I have with the food. I am working on it though.

Bars Ingredients
almond crumbs (I used dehydrated nuts in a food processor)
cashew pieces
hemp seeds
golden flax
sea salt
vanilla
lemon zest (oh foo I forgot this)
agave (I used honey)
maca
cacao nibs
goji berries

sweet cacao sauce will be made tomorrow:) That goes on top.

I put all dry ingredients in a bowl first and mixed it up. Then I added the wet ingredients. I put parchment paper on a sheet pan and then placed all the nut mixture on the pan. The bars are in the dehydrator and will be cut tomorrow.

Day #176 Caribbean Conch Chowder pg. 146 entertaining in the raw

I wasn’t sure if I really wanted to make this tonight. I was on the phone with Jason wondering what I should make. He said he would eat it, so he made my decision for me. It has been a long day again. I studied for hours and worked at Rutabagas until about 8pm. I picked up my boys then came home to clean and do this delicious recipe. I didn’t have the scallions or red pepper, but I did slice up coconut meat and added it to the soup. It is supposed to resemble clam chowder. I think it is a bit too salty for my taste, but Jason will probably like it. If not, maybe my dogs will eat it. I don’t know if they like brazil nuts, but Sirius LOVES coconut!

Chowder Ingredients

brazil nuts
water
olive oil
lemon juice
nama shoyu (I used bragg’s)
shallot
nutritional yeast
salt
black pepper
chili powder
cayenne

All ingredients were added to the blender. This was easy to put together. MK has this soup in a thai coconut shell in the photo in the book. The presentation is adorable. Unfortunately I don’t have a shell, Sirius always get the shells:) I love him. He is the best dog ever!
