Day #145 Black Sesame Crackers pg. 68 entertaining in the raw

These crackers are so beautiful.  They always remind me of the work EXOTIC!  I love black sesame sees.  They are so unique.  This recipe took only a few minutes to put together.  I didn’t soak anything just put sesame seeds and ground flax seeds in a bowl together and then blended up the tomatoes, salt, cumin, water and cayenne.

I mixed up the tomato mixture with the sesame flax mixture and then put it on Teflex sheet.  I halved the recipe and it made a nice size square on one  sheet.

The directions don’t say how long to dehydrate the crackers.  The directions say to dehydrate until crisp, I am expecting them to be done in 24 hours.

Crackers Ingredients

2 cups sesame seeds

1 cup flax meal

3 roma tomatoes (I used a yellow heirloom)

1 1/2 t salt

3/4 t cumin

1/4 water

pinch cayenne

I found white asparagus last night at Target in Orlando.  I decided to make this recipe because it is part of a recipe that has asparagus and many different mushrooms.  I don’t know where I will get them, but I am praying that somewhere in this town will have them.  I wrote an email to MK to ask him if there are other mushrooms I can use instead of enoki, morels, and almond.  That is one small problem that I am having with this project..I can’t always find the ingredients.

I just found out tonight that David Wolfe will be coming to St. Augustine in January on the 15th!!!  Yippy! I love hearing his lectures.  I am going to order my tickets tonight!

Day #144 Orange-Pineapple Flan and Lime Syrup pg. 154 entertaining in the raw

Last night we went to the potluck in Gainesville. It was a great night! I went with my family which was a real treat. I love having us all together attending these gatherings. It’s so good for my kids and Jason and I. I was able to chat with my “raw” friends from all over central Florida.

Everyone was so interested in the Banana Creme Pie and how I made it. They loved it. I love seeing everyones’ smiles when they enjoy the desserts. I enjoy making the desserts with love. Something about making all the great sweet foods. I guess that is the way I grew up so I have it in me. My mom still makes desserts all the time. She does have a dehydrator now, which is really great. I still need to go over there and show her how to make the flax crackers.

I did get to make this excellent tropical treat today, which I planned on doing. Last night at the potluck we won the gift basket through the raffle that they did. What a fantastic idea. The basket had flax crackers in beautiful jars, hand crochet stocking by Theresa, Christmas Potholders, Wheat Grass book, Jar of Organic Coconut Oil, Pound of Pecans hand picked by Theresa and Steve, Container of Cheese Logs, Gentle Waters Certificate, Glass Container with Fudge, Fresh Squeezed Orange juice, Dr. Bronner’s soap, Saurkraut, Lara Bar and One Lavender Plant. We bought 4 tickets and I picked 2 that I had a feeling we would win. I saw the numbers 0338 two times yesterday, Sabby’s guitar teacher’s last digits to his phone number are 0338, and we saw the numbers either in Old Navy or Dick’s Sporting Goods, anyway, I picked tickets with those numbers and Sabby picked two. Anyway, our winning numbers last digits were 03338. So awesome. Sebastian was so excited because he wanted the stocking. He also loves Theresa’s crackers. They are always a treat for him at the potlucks. Christian really wanted the fresh squeezed orange juice. We were all so excited!! So of course I had to use the 1/3 cup of orange juice for this recipe. So now I have a bit of Theresa’s love in this recipe:)

Orange Pineapple Flan and Lime Syrup Ingredients

coconut meat
pineapple
orange juice
agave
coconut oil
salt

agave
lime juice
lime zest
vanilla extract

Both of these recipes were made in the Vita-mix. I put the flan in ramekins lined with plastic. The syrup is in a small mason jar.

Jason and I are going to Orlando today to shop and enjoy each other. We are blessed:)

Day #143 Tomato-Chile Sauce pg. 180 entertaining in the raw

I am waiting for Jason to go to Gainesville. He went to pick up the boys so I could make my recipe.
I had to make the recipe quick. It is really easy, it took me about 5 minutes. I had to soak the sun-dried tomatoes for an hour before making it. I didn’t have ancho chile to soak, so I used the powder.

I tried this sauce with the tamale. It is definitely one of my top entrees. I would’ve made the entire recipe today but I couldn’t find cornhusks. I planned on doing the entire recipe tomorrow, then I realized Jason and I are going out of town together to do Christmas shopping and go to Season’s 52. Season’s 52 is a restaurant that we have gone to for years. They change their menu with the season’s. They offer vegan, vegetarian, and gluten free options. It will be a nice relaxing day with my hubby. It’s been too long since we have gone on a DATE. ;)

So tomorrow I may do the orange-pineapple flan. It looks incredible.

Sauce Ingredients
sun-dried tomatoes
ancho chile
roma tomato
shallot
lemon juice
olive oil
raw agave
salt
chili pepper flakes

All ingredients go into Vita-mix. It whips up nicely. I almost forgot the olive oil. It wasn’t blending then I put that in and it blended nicely.

I am so sad, yesterday I didn’t do a quote. Sometimes I lose my head. So I will do two today.

Day #142 Vegetable Tamale Filling pg. 180 entertaining in the raw

What a relaxing day I have had! I went to the gym and hung around the house. It was unbelievable, I listened to Spa Music on Dish Network, then I made a footbath, drank ice cold orange, lemon, lime water and made my beaded beads:) AAhh I really was waiting for something to go wrong….IT was just TOO PERFECT!

I went to visit Jason at Papa Johns tonight and I asked him to pick out what I should make. He picked out this knock-out recipe. I was hesitant to make it at first. I am really sick of things with cashews, but I just bought 25 pounds of them so I better use them. When I made it, it took my breath away. I couldn’t resist trying it. It is absolutely the best thing that I have had since making the chili. I really must love Mexican food. I really am eating things that are rather spicy, such as chipotle peppers with sun-dried tomatoes. Jason made me another recipe of MK’s chili. I love that so much!

Tamale Filling Ingredients
corn
tomatoes
red peppers
sun-dried tomatoes
pine nuts
cashews
sea salt
nutritional yeast
red onion
cilantro
garlic
lime juice

All ingredients are put into the food processor except half the corn, tomatoes, and red peppers, which I placed into a bowl. I used green peppers because I have been craving them still. When the ingredients were mixed in the food processor I then added them to the mixture in the bowl. The aroma is absolutely divine! I had to put it away fast because I have eaten enough today and even though it was super yummy, I didn’t want to eat.

Tomorrow I will make the sauce. This meal is going to be one of my faves, I know it!

Day #141 Blood Orange-Crispy Fennel Salad pg. 89 everyday raw

I completed the salad tonight. Jason had it for dinner with a new recipe I made at work. I made curry vegetables. Of course he loved it. He never really complains about my cooking or my raw recipes:)

It turned out so beautiful. I finally picked up my black sesame seeds from work. I made this after I clocked out, while I was waiting for him to escort me out of work. He is such a gentleman:)

Blood Orange Salad Ingredients
fennel bulbs
sea salt
black pepper
olive oil
blood oranges
arugula
cremini
macadamia feta cheese
fennel fronds, for garnish
blood orange dressing
black sesame seeds for garnish

I don’t really care for fennel in salads. Even though I do enjoy fennel is blended salads. I have made a similar recipe to this for a potluck meal. I never tried it before, but I wanted to do something different. I was not impressed with the flavor. This salad is a little better than the other recipe I made. I will not make this again. Even though the presentation was beautiful. Sorry Matthew.

Day #140 Blood Orange Dressing pg. 89 everyday raw

I am watching Harry Potter. I haven’t seen this one yet. So I will make this short. I decided to make the blood orange dressing. Funny I made the blood orange dressing on the night I am watching the Half Blood Prince. I didn’t plan it, I just though of it now actually.

Blood Orange Dressing Ingredients

Olive oil
Lime juice
Blood orange juice
sea salt
pepper

I bought these juicy oranges here at Ferris Groves. It is an orange store that I have been going to for years, since I was a little girl when we moved to Citrus County. It’s so great that I bring my kids there and they test the oranges and get freshly squeezed orange juice from there too.

Day #139 Chocolate-Ginger Macaroons pg. 42 everyday raw

I was looking through everyday raw and entertaining in the raw, to get an idea of what I will be making this next week. The more I looked through the books I realized how many recipes I have not done. I really am prone to using the everyday raw book. I think because it is based on recipes that you can use everyday, now I can see why he named it that (DUH). When I first received the everyday raw book I really thought that all the recipes were very hard. After these few months on this project I realized how easy the everyday recipes are. I tend to do them one at a time. The entertaining in the raw book is made up of more gourmet meals to please crowds. They are very delicious, but I have been doing them in steps. I am going to try to be diligent and try to finish both books by the year’s end, but after viewing all the recipes I am not certain that I will, especially when the new book comes out. After making that banana creme pie last night, I have a feeling that I will favor the dessert book:)

In this holiday season I have prepared many desserts. I would make desserts everyday if I could. And with the new book coming out I want to make that possible. Many people don’t want to try all my recipes, but when I bring a dessert around nobody can say “NO”.

Tonight I was in the mood to make a chocolate dessert. Even though I have so many dessert recipes in my house. I think that I really need to lock them up. I am addicted to them. I try to not eat as many servings, but I love all the desserts. I have been eating the apricot cake. It is definitely one of my faves. This recipe calls for dehydration, but I think they could easily just be refrigerated. There really is nothing like the flavor of cacao powder and sweetness of maple syrup.

Chocolate-Ginger Macaroons Ingredients

1 3/4 cups coconut
3/4 macadamia nuts
3/4 cup and 2 T cocoa powder
3/4 maple syrup
1/4 cup and 2 T coconut oil
1 T ground ginger
1 1/4 t vanilla extract
pinch of sea salt

All ingredients are put into food processor. First dry then add wet. I used a tablespoon to put the mixture onto my NEW Teflex sheets:). They will be done in a few days. I finally found some guinea pigs that will eat some of my desserts. The people that work at the bike shop. Gary is a customer at Rutabaga’s and now he works there. Many of them are vegetarian, I guess. I know they like hummus and tabouli, so I think they will like the desserts. I know Gary will. We are thinking about buying new bikes and we stopped there a few times this week. Today we went so Sabby could test drive a bike. His tire was flat after school and with the help of Grandpa, we made it to the bike shop and it went flat again, so they fixed that too.

I am going to watch a Christmas show with the boys and head to bed, without doing the dishes. I am too tired. I will be up early in the morning and I will do them then.

I had a green smoothie again today and even did meditation with Jason at my spot at the lake. The weather was beautiful today, a little rainy, but invigorating.

Day #138 Banana Crème Pie – EVERYDAY RAW DESSERTS (not released yet)

This is the big surprise!! Two nights ago I received an email from Matthew Kenney!! He sent this Angelic Banana Creme Pie dessert. This pie was created by Matthew Kenney himself and Meredith Baird. Meredith helped Matthew on every aspect of his new book. She has her own website and is the founder of L.O.V.E. Nude Food. I have been so excited for the last 2 days, waiting to make this pie. It is the biggest pie I have made! I used at least 6 cups of cashews to make it. I know I am bringing this pie to a special place-I am bringing it to the Gainesville Potluck on Tuesday. I am looking forward to hearing how delicious they think it is. The last time I went I brought the Lavender Pie and everyone loved it.

I am glad I purchased more cashews. If I hadn’t, I wouldn’t have had enough to make the pie.

Jason was here to help me open up the Thai coconuts. The coconut creme recipe called for the coconut milk, so used the coconut meat and water. I blended it up first then poured it into a glass jar to save it for the creme recipe that I did after the filling.

I couldn’t find macadamia nuts ANYWHERE!! Is there always a shortage?? I guess I need to order them online. I had to use cashews for the crust:( I really tried to find mac nuts. I went everywhere close to my home. Rutabagas doesn’t carry them. Walmart was out and I didn’t see them at any of the other grocery stores. Even bananas were a challenge for me to purchase. Rutabagas nanners were green and I needed ripe bananas, so Jason stopped at Sam’s on his way home from his LAST day of school (Yippy!!) and the lines were too long and we had to get Sabby to soccer, so he didn’t buy them. So it’s later than I wanted to make it, but it is well worth it. It is a 3 part recipe and it only took 20 minutes. That includes cleaning out the Vitamix.

I think my Vitamix is dying. It started smelling really bad and I had to pour the mixture for the banana filling into a bowl and stir the mashed bananas (I mashed them in food processor) into the mixture. I then added coconut oil. I mixed it until the coconut oil was well incorporated. Even though I didn’t use the Vitamix for the entire filling mixture, it was creamy and smooth like silk. It’s a very beautiful mixture. I poured the filling into a plastic lined cheesecake pan because I still don’t have tart pan (it actually calls for a tart pan).

I added bananas to the top of the banana creme filling, then I had to make the coconut creme.
I made the coconut creme in the Vitamix after the banana filling and it worked great, so I think that I just can’t add too many cashews to the Vitamix. I added the coconut creme on top of the banana creme and the bananas. The coconut creme is the best coconut mixture I have EVER had!! I absolutely love it! It is creamy and light. It reminds me of yogurt I used to buy. Oh my gosh!! Thank you Matthew and Meredith! I can’t wait for the entire book to come out. I know that it will be the best dessert book! Desserts are my favorite to make. Please OH Please release the book soon! I want to include it in my project.

Note to readers-this pie is rather expensive BUT if you made it for yourself you could freeze it and it would probably last at least a month. It is huge:) I wouldn’t want to keep it for myself, I love to share these creations.

vanilla Extract (or 1 bean)

Day #137 The Muscle pg. 32 everyday raw

I decided to make this outstanding shake for my hubby. Who else would be better to give it to than him? He is my perfect muscle dude! This shake turned out superb. I have never had pears and mesquite together. Every time I have mesquite it makes me think of a cold night by a fire in the woods somewhere. IDK why but it does. I have decided that mesquite is only good with a few ingredients and I would have to say PEARS and of course, chocolate are two of these ingredients. Anything goes great with chocolate. I think this is perfect for a chilly night after a long workout:)

Those of you who don’t know what mesquite is well, it is a bean pod that comes from the wild mesquite tree, mesquite pod meal is very nutritious. It is sometimes called White Carob. To me that is a more appetizing name than, mesquite. Mesquite meal is rich in calcium, magnesium, potassium, iron, zinc, protein, and lysine. I love the Navitas Naturals brand. I love the colorful packaging. It is always more fun to work with ingredients that have bright and colorful packaging.

The other night I went to Publix to get apricots for the cake I made and found these cute little pears that I used for this recipe. One reminded me of a yin yang symbol, so of course I had to buy it. They are very tasty. Pears are very different from apples. These have a leathery skin. The outside is tough but once you break it open they are juicy and soft. I guess I could compare these pears to many people in my life. They are tough on the outside but once you get to know them you get to the sweet soft side.

I have a surprise for tomorrow’s recipe. I wanted to make it today, but instead of shopping I decided to clean my room and bathroom. I threw out so many papers. I don’t particularly like cleaning but it has to be done. I did get the chance to meditate and read in my fave spot. I am taking on 2 more small challenges. One green smoothie a day (again) and to meditate each day for 90 days. I do better when I set a time limit. I figure both make me feel so much better so I might as well make it a daily ritual for me.

I am really excited about tomorrow. It is one of the most special recipes I have made. You will want to tune in for it. Yippy!!

Goodnight. I am going to do some shopping and clean some more. As of right now, I have my bed full of clothes, beads, magazines and more and more papers. I would like to sleep in my own bed tonight, instead of the couch:( I usually fall asleep there, reading or watching the first 5 minutes of a movie. My poor hubby, he always ends up watching the rest of the movies by himself. And yes it is literally the first 5 minutes that I fall asleep but if I manage to make it past the first 5 minutes then I am up for the entire movie.

Day #136 Apricot “Yogurt” Cake and Sweet Cream pg. 136 entertaining in the raw

Happy Birthday to my gorgeous mother!! And those of you that read yesterday’s entry, well, I did get the dehydrator for her and she cried..Yes tears of joy. I love it when she cries. In a fun kind of way. She understands me. I just love to buy her things that I know she really will appreciate. If she cries I know she does! She probably knew what was coming to her, I mentioned that I wanted to get her a dehydrator at our Thanksgiving gathering. I bought her flax, Braggs, and an onion and of course the recipe for Theresa’s famous onion flax crackers.

Today was an unusually busy day. I imagined that I wouldn’t be that busy but somehow my day flew past. I did manage to pick up my organic cashews:) I ordered them 2 weeks ago and kept forgetting to go get them. I rode with Sabby to school and then I planned on coming home to clean but I opted to go to my perfect place in the park to read between my 3 trees. Of course it was my Wayne Dyer book. I learned so much today about myself and my surroundings and relationships. One quote that I really loved today was, “Thy peace is the essence of the universe. It is God at work, at play, and everywhere in between. It is infinite love. There is no anger, fear, greed, malice, or envy. There is a vast ocean of peace always available when one comes to know “thy peace”. In this place problems do not exist. In his book Dyer explains in 7 chapters how to live the prayer of Saint Frances of Assisi. The first of the 7 is “Lord make me an instrument of thy peace”. It is exciting for me to read this book because he is writing about things I have known but the way he presents the ideas in his book draws me back to the peace I do feel when I am nearest and in most need of God!

It was a beautiful day for biking and the gym was also a real treat. I decided that I am going to switch up my routine. I was just getting started in the gym about 1 1/2 months ago. Now I have been steady going so I figure I will begin to do my circuit training. To me this is definitely the most fun!!

Well, enough about my day, I will get to the recipe. I knew I wanted to make this, but today I realized that apricots are out of season, and I thought, “Where am I going to get them?” I called Walmart right away, but I was quickly put on hold and nobody came to the phone in the produce department. I hung up and called back. I didn’t want to make a trip there if they didn’t have them. Once again I was put on hold for what seemed even longer. I was in a hurry so I hung up and called Publix. I love Publix. I don’t know why I didn’t call there first. They helped in 3 minutes and even told me when they came in and how much they were by the pound. I picked them up after Sabby’s guitar lesson and came home and soaked all the ingredients that needed to be soaked. Once the ingredients were ready I threw them in the blender. I did get somewhat creative, but once again, my decorating is not comparable to MK’s expertise. One day I will get there:)
I did have fun with it. I still need to buy a piping bag and some spatulas. I can’t believe I am into this project so far without so many of the proper tools for the kitchen. I used a cheap ziploc bag to decorate with the sweet cream. But I have to say, it was fun to decorate. I do need some tips though. I am learning.

Apricot Cake Ingredients
cashews
coconut meat
dried apricots
fresh apricots
agave
coconut oil

vanilla
vanilla bean
juice of a lime
garam masala

I was interested to see how the garam masala would taste in this recipe. I absolutely love it. There is a hint of the flavor, not overpowering like chili. It is subtle and light. The dried Turkish apricots are so delicious. At one time I was addicted to them. I would eat so many of them a day, now I am fond of them but I prefer not to eat too many dried fruits. They dehydrate me, but they are delicious!

Sweet Cream Ingredients
cashews
coconut meat
vanilla
salt
agave


These ingredients also whipped up lovely in the blender. I am going to use this “frosting” on some Christmas cookies. It is perfectly flavored with vanilla and it’s not too sweet!

The cake and the cream are in the refrigerator now. I did plan on bringing it for the party, but I got started too late on it. I did bring over the citrus tart and my mom, dad and sister liked it. I am going to bring some apricot cake to friends tomorrow. I haven’t seen too many people the last couple of days, because I have been studying and really have been reaching to Higher Heights within myself. I really do feel like I am on a spiritual vacation. I am loving it. How could I not? I make the best food ever, and I have time to enjoy the outdoors, which I missed so much while I was working more hours. Most of all I recognize all the gifts that God has placed in my life. I may be missing some, but I will appreciate them all when I am destined to appreciate. IT IS ALL IN DIVINE ORDER!
