Day #317 Kulfi pg. 134 entertaining in the raw

An easy recipe to top of the wonderfully rich pudding. I took some to Christian’s Grandma today and she really loved it! She is the one who showed me juicing 15 years ago! It is hard to believe that I have known her that long! Wow! I actually had the same juice for breakfast this morning that she made me so long ago. My morning juice was apple, carrot, parsley, spinach, celery and cucumber. The cucumber is an add in for me. It is great to make more liquid. I am hooked on juicing now. I really love to drink instead of eat this time of year. I don’t juice feast, but I chew less. It is more refreshing!

This recipe is like nothing I have made prior to this project. Kulfi is actually an Indian-style ice cream. Matthew Kenney explains in his book that it is creamier and richer than ice cream. It was originally made with milk from Buffalo, I thought that this little fact was interesting. I have never had Buffalo milk. When I was young, my parents knew 2 Indians who had Beefalo, similar to Buffalo. I tried that meat when I was about 7 years old, but never tried the milk. I remember it was different than cow, and I told my parents that they should sell it in stores. I still remember John and Bev. They had a wolf and so much land for the Beefalo. I always loved to go over there to see the Beefalo and hang out with the wolf. Wow, funny how so many memories have stirred up inside of me since I began writing on this blog. Well enough with my trip down memory lane.

Kulfi Ingredients
coconut oil
agave
coconut meat
white cardomom pods
rose water

All ingredients were blended in the Vita-mix.

I posted the photos from the other day of my red pepper coconut wraps. The basil wraps are another story, well, they turned out crunchy and cracked when I tried to fold them at all, so I just showed the red pepper.

Day #316 Crispy Lime Macaroon pg. 134 entertaining in the raw

I have made many macaroon recipes during this last year. I really love the smell of these macaroons. They are shaped differently than previous recipes. I had to spread them thin on a Teflex sheet. They turned out pretty with the specks of lime zest among the coconut and almonds. As I was making these, I thought that they would be even better with Macadamia nuts! Making these provoked thoughts of Hawaii in my head. I know Macadamia nuts grow there and the smell of coconut always reminds me of a tropical vacation. I guess that stems from my tanning days in the sun and spreading on Coppertone oil. I always loved the smell. Boy how things have changed, for the better, I no longer lay in the sun for hours, just about 20 minutes a day. I still spread oil on my skin, but it is coconut oil. I still love basking in the sun, and I am fortunate to live in Florida and I can soak up the rays all the time. Maybe I will make these one day with Mac nuts.

Macaroon Ingredients
coconut flakes
almond crumbs
almond flour
sea salt
lime zest
maple syrup
coconut oil
vanilla extract

I mixed all dry ingredients together then added wet ingredients and mixed it up. I spread the mixture out as thin as I could. It is difficult to spread it to 1/2 inch. Now they are in the dehydrator. The macaroon appears very thin in the photo in entertaining in the raw book,mine, however, are not, but they will be very tasty I am sure. I love coconut!

The kids have been asking me all day to go to Grandma and Grandpas house, so I guess I should. I am pretty tired from the exhausting workout today, but it feels so good to exercise. It becomes addicting after I get into it. I can tell my metabolism is kicking in more, it only takes 10 minutes to start sweating on the elliptical compared to my 20 minutes a few months ago. I do sweat easier than I used to. My muscles are loving all the attention;-). It will be fun to do it again tomorrow. I love my iphone, I always listen to youtube during my workouts. My new fave is Trevor Hall’s “KING”. I am looking forward to his new CD release this month. If you want to check him out, here it is!

Day #315 Creamy Mango Pudding pg. 134 entertaining in the raw

Okay, I am really in the mood for dessert so I made the mango pudding.

Super easy and delicious! I have not been eating any sweets the last few days so this is perfect.

I still have to make the marcaroons and kulfi.

I am on the way to the baseball game to see the second all-star game. They won last night!! Hope they do itagain tonight!

Pudding Ingredients
coconut meat
mango
water
agave
cashews
vanilla
salt
coconut oil
cinnamon
nutmeg

Blend in a Vita-mix and strain through chinois. Chill overnight.

Day #314 Sweet Pepper Wrappers and Basil Wrappers and complete recipe pg. 82 entertaining in the raw

I made the wraps today. It’s been such a busy day, I can’t believe it is already 4:00pm. I wanted to have this complete meal done, but my plans got messed up. I did some blueberry picking today with my family, so it was worth it.

The wraps are in the dehydrator until this evening. I didn’t have beet juice!!! Gosh, what is the deal, I keep forgetting ingredients, this time I made them without! I just sat down to write this and realized that I didn’t put beet juice in the wraps. Well, I did make them before with the beet juice.

Sweet Pepper Wrappers Ingredients
Basil Wrappers Ingredients
Greens Ingredients
spinach
olive oil
salt
lemon juice
black pepper

Marinate all ingredient for 1 hour. Mine will marinate longer.

Day #313 Truffle Cream pg. 82 entertaining in the raw

I just got back from a long day outside. I went running this morning, I went longer than I have been able to in so long. I ran for 20 minutes:). I know it doesn’t seem like much to some of you runners out there, but I have to say, I am feeling good! Then I wanted to get the kids out of the house so I decided to go to Crystal River. We went on a hike and found blackberries. TONS OF BLACKBERRIES! I have never seen so many blackberry bushes in one area. The kids had so much fun picking them. It was a very hot day, so I stood in the shade with our dog. He was so hot, he is black, and he was crying to go into the shade. We had a great day. Then after our hike we came home to eat and then Sabby had baseball practice. His first All stars game is tomorrow.

I made a quick part of this recipe. I made the truffle cream. I have to finish this meal soon, before the almond paste goes bad. It still smells fine, but I know it needs to be eaten soon. I am picking up my coconuts tomorrow and then I will make the wrappers. I have made these before, but I ate them without making everything else. I just ate them with lots of veggies. So I have to make them again so I have the complete meal.

Cream Ingredients
cashews
water
truffle oil
raw agave
salt

Blend all ingredients in a Vita-mix until smooth.

Super simple and delicious. I can’t wait to make the wrappers tomorrow with the baby greens. We will have a nice dinner tomorrow before Sabby’s game.

Day #312 White Raisin Shiitake Dosas, Cilantro Cream, and Ginger-Tomato Chutney pg. 132 entertaining in the raw

The meal was extraordinary! One of my faves and so easy to make. That is what I love about Matthew Kenney’s recipes, they look so gourmet and they are, but they are easy to make. If you own these books don’t feel like you can’t do these recipes. I am telling you they are not hard. This recipe is well worth making. I love love love the cilantro cream, I am glad I have extra, because I will use it for my salads.

I made the filling and the chutney today.

Filling Ingredients
1/2 cup golden raisins
1/2 warm water
1/4 cup ginger juice
2 cups sliced shiitake mushrooms
1 t minced ginger
1/4 cup olive oil
salt and pepper
1/4 cup chopped almonds

Soak raisins in the water with ginger juice. Toss shiitake with minced ginger, olive oil, salt, and pepper and dehydrate for 1 hour. Drain raisins and combine with shiitake and almonds.

Chutney Ingredients
2 cups sun-dried tomatoes, reconstituted
1/2 shallot
2 roma tomatoes
2 T fresh lemon juice
1/4 cup olive oil
3 T raw agave
1 T salt
1 t chili pepper flakes
1/4 cup ginger juice

Pulse chop sun-dried tomatoes and shallot in a food processor. Place mixture in bowl with Roma tomatoes. Blend remaining ingredients in Vita-mix until smooth; add to bowl. Stir until well combined.

I know this sounds like alot of ingredients and time consuming but I can assure you it is not. If you make it, email me and let me know what you think.

Day #311 Cream pg. 132 entertaining in the raw

Today I went for a quick jog in the hot sun, I was so thirsty. Sabby and Jason and I found blackberries and Jason and Sabby picked about 3 cups of them. So I had a little bit of water from God’s special food. We were even blessed with a bag to carry them home in. I love to see Sabby’s face light up from all the blessings:)!

I made the cilantro cream for our dinner tomorrow night. It was a quick and delicious cream, it’s perfect for a salad dressing too.

Cream Ingredients
1 1/2 cups cashews, soaked 1-2 hours
1/2 cup coconut meat
1/2 cup water
1/4 cup lemon juice
1/2 t salt
1/4 cup cilantro

Blend all ingredients except cilantro in Vita-Mix until creamy. Add cilantro and blend for a few moments. Refrigerate.

I can’t wait for this meal. I have a really good feeling about the flavors. I guess I am really hungry for a delicious meal. I have never had dosas until this project. I am learning many interesting things.

Day #310 Dosas pg. 132 entertaining in the raw

Sabby and Christian are with their friends today, I just did my recipe, so when Sabby gets home I can hang out with him. I am thinking about mowing the lawn. He is a good driver on it, so maybe we will do that to help Jason out. He has studying to do this weekend and I am sure he would do the lawn, but I love to help him around the house as much as I can. Now that my recipe is done, I won’t have to worry about it later on.

Dosas Ingredients
1 1/2 cups flax meal
1 cup chopped yellow squash
1/2 cup chopped coconut meat
1 T fresh lemon juice
2 cups water
2 T agave
1/2 t salt
1 t cumin

Blend all ingredients in a Vita-Mix until smooth. Spread thinly into 6-7 inch rounds on dehydrator Teflex sheets. Dehydrate 5-6 hours until dry but very pliable.

This recipe make my mouth water! I know it will be fantastic to have for Memorial Day. That way everyone can try it at my parent’s house.

Ok, now on to finish some cleaning.

Day #309 Spring Vegetable Tagine with Couscous, Harissa, and Cumin Flatbread pg. 120 entertaining in the raw

Finally!!! I made the entire recipe, I feel like this has been dragging on for weeks. I couldn’t get the fava beans, so I used English peas. It is a tasty treat for a mid day snack. I enjoyed this meal. I would say try making this even though it is time consuming, well it was for me, but mainly because of my lack of shopping and finding the ingredients.

I haven’t had any knew faves, since the sesame wraps. Those are absolutely over the top! I wonder if I will find any recipes in the next couple of months that I will love just as much.

Asparagus and Tomatoes Ingredients
asparagus, I used green
olive oil
salt and pepper
cherry tomatoes, I used grape

Vegetable Stock Ingredients
celery
carrot
tomato
water
thyme
peppercorns

Fava beans and Mushrooms Ingredients
fava bean, I used english peas
olive oil
salt and pepper
mushrooms, in the picture I didnt’ have any on this plate, I realized it after

Now I am going to Sabby’s baseball practice to see him hit some balls. His first All Star Game is next week. They are out for summer and ready to chill!

Day #308 Harissa pg. 122 entertaining in the raw

Well, once again, I didn’t finish the recipe. These last few months of recipes have been a pain! I love doing it but the ingredients are tough to find. I managed to find at least these ingredients. I am on a mission again tomorrow.

Harissa sauce is somewhat spicy. This meal will be perfect for summer. Even though it is somewhat spicy, it is light and refreshing.

Harissa Ingredients
red chiles
sea salt
caraway seeds
smoked paprika
ground cumin seeds
garlic
red pepper
tomato
red wine*I omitted, which I am sure it changed the flavor dramatically, red wine doesn’t like me
lemon juice
olive oil
salt

Blend all ingredients except salt in a Vita-Mix until very smooth. Season with salt as needed.

Well, tomorrow is the last day of 7th grade for Christian and 3rd grade for Sabby. Sabby had an award ceremony today and they signed the song “The Climb” by Mylie Cyrus. Oh my gosh! I wanted to cry!! He has changed so much over the last year and will continue, it is so hard to see my baby grow up so fast! He is such a smart, sweet boy, I just am so touched by how fantastic they both are doing in this life. God has special plans for them, and I support them and will FOREVER!!
