Day #307 Marcona Almond Paste pg. 82 entertaining in the raw

This recipe calls for Marcona Almonds. These are considered to be the “Queen of Almonds.” This ingredient is another that I needed to buy and I had never had a Marcona Almond before. The Marcona Almonds are imported from Spain. They are smaller, and softer than the California Almonds. To me they are not as sweet. All almonds are amazing! I love almonds and especially almond butter.

The almond paste is my first step to this recipe. Quick and easy. The only time consuming part will be the wrappers. I have already made these back in September, but I ate them. I need to make them again along with the cream and greens. I have been stalling for a week now, I wanted to order Thai coconuts and I they didn’t have organic, so I waited. I hope they arrive because I need to make a few recipes with them. I guess I will have to buy some tomorrow, it’s just cheaper to buy a case.

Almond Paste Ingredients
marcona almonds
lemon juice
water
olive oil
salt
nutritional yeast

I processed all ingredients in a food processor for a few minutes and it became a beautiful paste. I has a strong scent of olive oil, hopefully it doesn’t taste like olive oil.

Tomorrow, my goal is to finish the rest of this recipe and pg. 120.

I also made Graham crackers today for Sabby’s class tomorrow. They came out so perfect. I still have to make the cream. He asked me to make the grahams for his class. I think it’s great he asked for something raw:). So I will be joining him tomorrow for his presentation and party. I can’t wait:) My baby will be done with 3rd grade this week. They are growing way too fast!

Day #306 Couscous pg. 120 entertaining in the raw

I just got home and made my recipe of the day. I made it through a very exciting and energetic day! Marsha and I did a class in Royal Highlands and made it back just in time for the potluck. What a fantastic turnout. We watched the movie inGREEDients and David and Robyn Burton did a question and answer session afterwards. I really learned so many new things!

I am very tired, so I will make this short. I made couscous tonight I am hoping to finish this complete meal tomorrow, or the next day. I need to find RAW fava beans. I don’t even know if that is possible, but I will try.

Couscous Ingredients
jicama
pine nuts
nutritional yeast
olive oil
salt and pepper

Process jicama and pine nuts until very fine. Add remaining ingredients.

This will be a really refreshing light meal.

Day #305 Posted Blueberry Linzer Cookies and Lime Powder pg. 22 entertaining in the raw

I finally assembled the Blueberry Linzer Cookies. Jason tried them and he liked them. He said he can taste the cookie more than the blueberry filling. I don’t see that as a problem, because I love the cookies. I have been eating them without the jam. I love the lemony flavor. I prefer to have lemon and blueberries together. What makes these even more special is that the blueberries were hand picked by me:)

I made lime powder for the sweet pea flan that my mouth is watering for this week. I will have to find sugar snap peas. Can’t wait!

Lime Powder Ingredients
Lime Zest

Spread on Teflex sheet and cover with a dehydrator sheet. Dehydrate overnight until completely dry. Place in Vita-Mix and blend into a powder. *I only used about 1/2 cup (4 ounces) of lime zest. I figured I only need to “sprinkle” the powder, so I made what I feel I will use. Besides, a pint (16 ounces) of zest is what the recipe calls for. That’s alot of limes and even more zest! Anyway, I figured I have halved other recipes so I quartered this recipe.

I was in the mood for Batman today, so here goes:
Robin: “Holy molars! Am I ever glad I take good care of my teeth!”

Day #304 Cheese Empanadas pg. 202 entertaining in the raw

Filling Ingredients
coconut meat
cashews
irish moss
water
sea salt
nutritional yeast
lemon juice
yellow pepper powder
dried oregano

Blend all ingredients except dried oregano in a Vita-Mix until completely smooth. Pulse in dried oregano. Pour into tart crusts.

I am getting things ready for my busy day on Tuesday. I am presenting Leesburg area about Raw Food. I am making 3 quick meals. Green Smoothie, Not Tuna Pate, and Avocado Cacao Pudding! It’s a beginner’s course, I love seeing everyone’s faces light up when they try God’s delicious fresh food.
Afterwards will be the Raw Food Gathering with David and Robyn Burton. We will all have a potluck meal and then watch inGREEDients the movie. What a special time this will be!

I am getting the kids ready to head to bed for their LAST week of school! My oldest will be an 8th grader next year, and my little one will be in 4th! Time flies. They are such a blessing in my life. I love them more than anything in this entire world! They are my life! I am looking forward to this summer with them. I haven’t been home all summer in years. I know it will be perfect!

Day # 303 Shells for Empadinahas de queijo pg. 202 entertaining in the raw

Today is a busy day. Baseball game, party, now on the way to go to a movie with my fam:)

Quick recipe!

I made the shells and now they are dehydrating, with the yellow pepper. The shells should be able to be filled tomorrow.

Shell Ingredients
pine nuts, soaked
nutritional yeast
salt
water

Pulse nuts in food processor to break up. Add yeast, salt and water; blend until smooth. Spread in small plastic-lined tart shells.

Day #302 Blueberry Filled Linzer Cookies (unreleased)

These were not as easy to make as I had hoped. I was impatient and didn’t get Linzer cookie cutters. My fault, they didn’t turn out as pretty as expected but the cookies smell and taste delish!!! I can’t wait to serve these to others.

These cookies are traditionally made with blanched almonds and black currant preserves, this is Meredith and Matthew’s Maine Blueberry version. Look for these blueberry cookies in the new book coming out soon.

Cookie Ingredients
almond flour
coconut flour
agave
lemon zest
coconut oil
vanilla
salt

Blueberry Jam Ingredients
blueberries
date paste
lemon juice
vanilla
salt

I am anxious to see the pics of these cookies in the book. The cookies are always so hard for me to master. The mixture always comes out doughy and sticky:(. I will continue to try. Maybe I am just not meant to make these cookies. Nah, I blame it on my using almonds and grinding them up instead of using almond flour from the milk, and the lack of the appropriate cookie cutters. They will still be adorable and loved by all, I am sure!

The pics will come tomorrow because they are in the dehydrator now. Stay tuned!

Day #301 Blueberry and Sweet “Cream Cheese” Mini Tartlet pg. 206 entertaining in the raw

This is the first recipe with the blueberries that I picked blueberries yesterday. I needed some time alone so I decided that I would go pick blueberries. It’s very peaceful out there and I love stepping into nature when I need a break.


I had such an awesome morning, I love the field. It’s 6 acres of beautiful blueberry plants for as far as you can see. the dew on the leaves and blueberries was amazing. I wish I could capture all the images I saw yesterday to share them with you. The pictures above are only a few of the images I have. I can’t wait to return to the Blueberry Field.

I hope this pie goes over well with my family. I am taking it to my parents house for them to enjoy. My dad says he loves the desserts the best. Last night he called me and said I should sell these cakes and ice creams. He is so sweet. He is always encouraging me to do whatever makes me happy. He has always been on my side! Yep he is the BEST DAD EVER!! My mom didn’t try the desserts, but she loved the sumac bread from the other day. She said it gave her energy..she seriously asked if I put something in it that would make her have more energy. I guess it’s the LOVE!

Of course this recipe was rather simple to make. I have been waiting to make this until I was able to pick fresh blueberries because they are best freshly picked by my hands.

Tart Crust Ingredients
nut flour
coconut oil
lemon zest

Cream Cheese Ingredients
cashews
coconut meat
lemon juice
agave
coconut oil
water
vanilla extract
sea salt
vanilla bean, scraped

Garnish
Fresh Blueberries
mint sprigs

Nut flour was combined and pressed into lined tart shells.

Cream cheese filling was blended in Vita-mix until very smooth. The tarts were filled with the cream and placed in freezer for 8 hours. Then the tarts were removed from metal shells and wrap in plastic wrap. These are going to be stored in the freezer on a cookie sheet, if they last that long.

Time to make dinner for my kids.

Day #300 Frozen Chocolate Pudding with Cinnamon-Glazed Plums, Chocolate Basil Wafers, and Vanilla Bean-Plum Sauce pg. 36 and Plum Carapaccio with Vanilla-Agave Syrup and Ginger Cream pg. 46 entertaining in the raw

These desserts came out so good!!! I can’t even tell you. Both of them RAWKED, especially the chocolate pudding. My sister is on the way to take these desserts to my parent’s house. I hope they enjoy them.

Plums Ingredients
agave
ginger juice
cinnamon
star anise
plums
sea salt

Syrup Ingredients
agave
sugar plums (I used regular plums)
salt
vanilla bean
vanilla extract
Mint sprigs

All ingredients went into blender for both recipes. The plums remained in a shallow baking dish to combine with the plum syrup.

Jason loved this. He must have been hungry because he ate BOTH desserts!

The cream and syrup were made a few days ago.

I am so HAPPY!! I found Plums! Publix had them after all. They were perfectly ripe and sweet just by themselves.

Today I went to pick blueberries, so I will be making some recipes with blueberries soon. I went out before 9am. The dew was still on the blueberries and the leaves. I anticipate the time the boys go with me. I know Sabby will love it. He can eat pounds of blueberries at a time! I have a blueberry cheesecake from entertaining and another surprise recipe from Meredith that I am planning to make. I am excited to make the Lintz cookies! I have to buy cookie cutters for these cookies.

Day #299 Frozen Chocolate Pudding pg. 36 entertaining in the raw

Well, today once again, I didn’t find plums. We looked 3 places and no luck! So I am back to this recipe, the wafers turned out beautiful and tasty. I love the cinnamon basil wafers with this pudding. I know the complete recipe isn’t done, but let me tell you….this recipe is going to be the best chocolate dessert I have had in a long time. I am praying for plums. I need some for this recipe and the the other to go with my cream that I made. I will find them, I have to.

Pudding Ingredients
cashews
coconut meat
water
agave
coconut oil
vanilla extract
sea salt
cacao powder
carob powder

Blend all ingredients in a Vita-Mix until cimpletely smooth. Pour into a half sheet or low-sided baking dish and chill in freezer until firm.

The pudding and wafers are in freezer, along with the cream until I find the plums.

I am tired, so I am off to bed. I did an all raw day today:) I feel pretty good, but earlier today, I wasn’t feeling too good. I even had my mom come over and check my sugar. I thought it was too high, but I think it was too low. Sometimes I eat bad and my body lets me know it. I haven’t been doing too good everyday these last few months. So I decided it’s time to clean out my body again. I hope I can stick to it. It just takes a few cheat days to start feeling the effects of my bad choices. But I do know that my choices teach me what is right for me:).

Day #298 Flatbread pg. 122 entertaining in the raw

I made many things in my kitchen tonight, 2 batches of bread, kale chips and flatbread.  I was going to make sauerkraut, but I am hoping my wonderful hubby can use his muscles to make the kraut.  Hint Hint:)

When I had my class this last weekend I let everyone try other sumac bread and they loved it. I planned on buying plums and making the rest of the meal from last night. Unfortunately I couldn’t get plums today.  My plans were messed up, some things came up that were unexpected so I will hopefully find them tomorrow.  Until then I will work on the complete recipe on pgs. 120-122.

I have been eating alot of dehydrated food lately, in turn, my lips are becoming dry.  I have to drink more water than usual when I do eat dehydrated food.  I have to make a conscious effort to drink more.  I drink so much water anyway, but my body craves it!

Flatbread Ingredients

1 cup flax meal

1 T dry basil

1 T dry oregano

2 t cumin

2 yellow squash, roughly chopped

1 1/2 cups walnuts, soaked 6 hours

1 1/2 t salt

1/2 t cayenne pepper

1/4 cup olive oil

1 shallot

1 T nutritional yeast

2 T raw agave

1 T sumac

Flax meal, basil, and oregano were put into a bowl and all other ingredients were processed in food processor, then added to bowl. Spread on Teflex sheet to 1/2 inch thickness; sprinkle with extra sumac and micro basil. Dehydrate at 115 degrees for 6-8 hours, so I will leave them in overnight. Remove them from sheets then dehydrate for 24 hours.

My dehydrator is full:)

I am off to bed.  I didn’t sleep well last night.  Hope I will tonight.
