Day #168 Cacao Mole pg. 188 entertaining in the raw

This unique meal will be done tomorrow. I made the mole today, and I am IN LOVE!! I have never made a mole before, nor had it in a restaurant. I don’t know if Cafe 118 has a mole sauce at the restaurant or not. I tasted it alone and it is a perfect blend of spicy and chocolate.
Cacao Mole Ingredients
chipotle chiles, soaked
red onion
garlic
sunflower seeds
almond butter (I made this with Jason yesterday)
raisins (I used dates, I forgot raisins)
olive oil
water
raw agave
cacao powder
cumin
coriander
salt
cayenne
black pepper
When I was putting all these ingredients in the Vita-mix I wondered, “how does MK know all the ingredients to use for a sauce like this?” Does he take a regular recipe of mole and then see what raw ingredient he can replace with the non raw ingredient? I don’t know, but I should write to him and ask…Maybe I can find out? This recipe is so awesome, I really think I could eat it alone! I love Chocolate!
I made the almond butter with about 4 cups of almonds that I soaked and dehydrated and then I used the Champion Juicer with the blank. It came out so smooth. It was really unbelievably delicious!! I was so excited to finally make my own almond butter. I did add a little olive oil and a dash of salt. I made this so I could use it for the cacao mole and for Jason’s Pad Thai recipe. Which by the way is remarkable. I finally nailed a good Pad Thai recipe. Now the next step is to find Kelp Noodles. I need to just order them, but I don’t like doing online purchases, as I might have mentioned before. He did like it, and that makes me happy.
To be honest, I really am tired of thinking about food. I don’t feel like making it, well, really just tired of tasting it all. I made so many things today, that by the time I had to make the mole I just really wanted to say forget it. I made the chili, again:), rosemary croutons, and the Pad Thai sauce. I really just want to go outside and take a walk. The weather has not allowed me to go out much. I am grateful for it, it is a change, but I am a Florida girl!
