Day #78 Basil Raviolini and Summer Tomato Sauce pg. 29 entertaining in the raw

Raviolini Wrappers ingredients pg. 30

coconut meat
spinach juice
basil leaves
salt
black pepper ( I omitted)

Raviolini Puree Ingredients
almond meal
pine nuts
cashews
lemon juice
sea salt
nutritional yeast
olive oil
garlic scapes or young green garlic
fresh basil

The meal turned out so beautiful. lt is sitting at the table waiting to be eaten by the most gorgeous man on the planet….My Husband! The sauce turned out beautiful. I didn’t post the pic last night. So here it is..
Matthew Kenney Project 405I love that it is not red! It makes this dish look so unique.

The Puree is very light. I prefer to use the almond meal for the cheeses it makes the cheese lighter. Nutritional Yeast is always a nice addition even though it is not completely raw.
Matthew Kenney Project 406 The cheese looks similar to Ricotta Cheese. The texture and consistency is very similar too. Not as heavy as Ricotta though.
I can’t wait until Jason gets home. I know he will love it! I love that I am able to make him food. I can express my love for him through food, which is the way I grew up! Always serving, eating and expressing love by food. It is the Italian way:)
Matthew Kenney Project 404

This one of my favorite meals. I am going to make a pizza crust out of butternut squash and flax, then use the cheese and tomato sauce. Yummy! I love raw pizzas!
