Day #74 Raw Chocolate Chips pg. 46 everyday raw

Today was a long day. Woke up early, sent the kids off to school, cleaned the kitchen, went to work, got home at 4, finally took time for myself and read some of a new book I am reading. Then I had class tonight. I finally started on my recipe by 10:30 pm. I thought that these would be really easy. Quite honestly they really made me in a bad mood. My piping bag broke so I had to make the chips with a plastic ziploc bag. It broke, then I decided that I would just spread the batter out and dehydrate it. So I have some chips and alot of batter that will have to be chunks. This recipe was easy to make in the vitamix, but doing the chips was an absolute nightmare. I wasted so much of the chip batter. I just hope these cookies are worth it. I seriously was ready to just throw them. I think I’m just tired. I really just want to go to sleep. This recipe should’ve been fun but I made it make me in a bad mood:(
At first things were going well. It was fun making the chips, then I realized the hole was too small for the chips so I changed it, then it just got worse from there!

Then I just slapped all the batter on the parchment paper and spread it out. I will make these chocolate chunks. So I will have chocolate chunk cookies and chocolate chip cookies.

Raw Chocolate Chip Ingredients

1 3/4 cups cashews, soaked 2 hours
1 cup maple syrup ( I used agave)
1 cup raw cacao powder
1/4 t vanilla
1/2 t sea salt

They are dehydrating overnight.

Even though this recipe was the hardest to make and the most time consuming yet. I know the kids will love these cookies. It will be worth my agravation, I am sure. This really should’ve been one of best recipes to make. I think it was my state of mind. Just tired.

Day#73 Chocolate Hazelnut Tart filling pg. 122 everyday raw

The last two days have really been an incredible experience for me. I feel ever since Reiki and chatting with Susan, I feel more focused! I feel like I want to be more creative again. I feel inspired, and I feel so many synchronicities today!! I was feeling strange last night. Not quite knowing what my purpose is. Then, I woke up today thinking I don’t need to find my purpose it will find me.

I was blessed and found an article in Energy Times with Wayne Dyer. It really inspired me to stop cutting my body down and treating it the best I can. He spoke about how our spirit really doesn’t change, our bodies do. They are materialized and they will dematerialize, so we need to care for our bodies correctly. I really feel like raw food is a necessity, as exercise, stress less, prayer, positive thoughts, and love to self and others! So many other things to name. This sets me up for an incredible journey. Many of his ideas are what I already think. I will begin to explore more than I have been. I don’t know where it will take me but I do know that I believe I am a spiritual being having a human experience!

Tonight I decided that I would make chocolate hazelnut tart. I bought hazelnut extract from Rutabaga’s. They had it! The cake was so much fun to make. There is not a strong flavor of hazelnut, I actually added more. Sabby tried it and I thought he wouldn’t like it, but HE DID! He had a spoonful, then another spoonful! I absolutely love making desserts! I can’t wait for M.K.’s desserts to come out!

cashews
water
agave
coconut oil
vanilla
sea salt
cocoa powder
hazelnut extract

I officially want a blend-tec. This morning I made a raw pie at the store and the blend-tec is the best. I love the shape and the fillings always come out so creamy. If I had an extra 350 dollars I would buy it, but honestly I don’t like to buy things for myself. Maybe I will buy one soon.

The pie is in the freezer now. Jason just got home, so we might cut it tonight. I decorated it with chocolate pieces and Sunfood Nutrition cacao nibs:)

It’s going to be the best pie I have made since this morning.

Day #72 Cookie Crumb Crust pg. 122 everyday raw

October 5, 2009

I had to make cookie crumb crust again. I accidentally fed it to my dogs, I thought it was carob. Oh my goodness I am so grateful they are alright. There wasn’t that much. I fed it to them last week. One thing I have learned that I have to do, is label what I am making. I really do love my dogs, don’t think I don’t. I made them the same recipe with carob. I am so grateful they are okay. I made the crust for the chocolate hazelnut tart. I need to buy hazelnut extract. I hope they sell it at Rutabaga’s.

Cookie Crumb Crust ingredients
cocoa powder
oat flour
sea salt
maple syrup
agave
coconut oil
vanilla

This pie will be delicious. I will bring some to work for customers or employees of Rutabagas.

I am headed to class, I get my test back tonight. I am definitely nervous, but not as nervous as the night I took it. I tried my best. I definitely didn’t slack off. I have been doing homework all day. So now I am ready to learn about our wonderful body’s bones.

Day #71 Cucumber pg. 114 entertaining in the raw

October 4, 2009

Tonight was the second part of my recipe. The cucumbers to go with paratha and mango mixture.

Cucumber ingredients
cucumber
1/4 t cayenne
1/4 t cumin
1 T lime juice
1/4 salt

I decided to do the cucumbers tonight, because I think it will taste really good by tomorrow night, after they marinate for 24 hours. I tried them, and they were very spicy from the cayenne. Jason tried the paratha tonight, he said it tasted like a piece of bread.

Today was a relaxing but fun filled day. We went on a bike ride in town. The boys were excellent! They didn’t complain at all:) Sabby said he would love to do it everyday, but go somewhere new each time we go. We have been able to go places as a family because Jason has been off. We rode to the park and Jason and Sabby threw the football together and Christian and I searched for blackberries. Sometimes we find them, but I am not sure if it is the season for them.
I can’t wait to go biking again.

Jason and I went on a date…to the gym. I renewed my membership and decided I will try to go 3 days a week. It felt exhilarating to lift weights again. It’s always nice when I can see my man work out. Love it!!

After the gym, I came home and got ready to go to Susan’s house. It was my first reiki session today. It was relaxing and healing too. I felt so connected to her, she is a kind person and willing to help everyone. I love her and hope to go back soon.

I’m off to rest, work in the morning and class tomorrow night. I went to work tonight and made flax crackers and other recipes. I am going to sell the flax crackers for the first time in the store tomorrow.

Day #70 Black Sesame Paratha pg. 114 entertaining in the raw

I finished the project early today! Yippy, now I can rest tonight and not be up so late.  Funny, this is the first time I have seen this recipe.  I didn’t know what paratha was so I looked it up and it reminds me of pita bread.  Paratha sounds really good, especially this paratha and the cucumbers and mango chutney to go with them.  I had to soak the walnuts and cashews for 2 hours, so I soaked them and went to my parents to visit and do homework.  I finished what I could, then came home.  
The walnuts and cashews had soaked long enough, so I started the recipe. It took me 10 minutes all together to make this paratha.  M.K. calls it a crisp, so I am assuming it should be “crisp” like the consistency of a cracker.  I feel like the dough should’ve been softer, similar to the pancake batter, but it is very doughy. It was hard to spread out. I did the best I could. They don’t look as pretty as I would like them to appear, but maybe they will look better after dehydration. I have to dehydrate them for 8-10 hours, so I will see after they are complete.  Jason came home while I was making them, he said they smell good.  I hope he likes this meal.  It will be done by tomorrow night or Monday night.  Depends really what we choose to eat tomorrow.

Paratha ingredients

1 cup flax meal

3/4 cup walnuts

3/4 cup cashews

2 yellow squash

1/2 t salt

1/4 t black pepper

1/4 cup olive oil

1 T nutritional yeast flakes

1/2 t cumin

1/4 cup black sesame seeds ( I used white)

I am going for a family bike ride on the trail.  The weather is beautiful and we are all home, so I hate missing opportunities like this, so I’m leaving!

Day #69 Salpicao Salad and “Fried” Jicama pg. 155 entertaining in the raw

Tonight’s meal looked just like we went to a restaurant and ordered a gourmet raw meal.  It looked so beautiful!

Matthew Kenney Project

Dressing Ingredients

1 1/2 cups cashews, soaked 1-2 hours

3/4 cup olive oil

1/4 cup coconut meat

1/4 cup water

1 t salt

1/2 t cumin

2 t lemon juice

2 T agave

Vegatables Ingredients

2 cups thinly sliced shiitake mushrooms

olive oil

2 T lime juice

3/4 cup green olives ( I used black, not raw)

1 cup corn

4 cups julienned carrots

3/4 cup raisins, soaked 20 minutes

1/4 cup parsley

Jason really liked tonight’s dinner.  I had a few bites.  It was like fine dining.  I love when he is home so I can make him dinner:)

I’m going to sit on the couch and soak my feet.  I haven’t done that in a while.  I will probably fall asleep pretty fast.  I woke up early this morning and went to work.  I think I am going in early tomorrow too. I would rather go early tomorrow and work a few hours then go in Sunday and work a few hours.

Today was a great day.  A day with unexpected occurances.  I got out early from work, so Jason and I went for a walk at the park.  Just like old times.  We always used to walk together while the kids were at school.  Lately we have both been so busy, so today’s unexpected visit was a breath of fresh air!  I also went for a walk with my boys this evening.  We went down by the lake with the dogs and went to the park and went on the swings.  On the way home I saw a fig tree that actually had beautiful figs on it.  I was so excited, I want one for my yard.  Maybe I will get one tomorrow.

Day #68 Brazil Nut Milk pg. 24 everyday raw

Today was a nice relaxing day for me.  I was at home alone all day.  I started my morning with a walk with my dogs.  I went for about 1 hours and 15 minutes.  The weather has been cool and crisp the last few days.  I love this time of year.  Walking is the best in the morning before the sun is too high.

I made brazil nut milk tonight, because I really have been craving milk.  The brazil nut milk is so delicious.  I really have been loving the brazil nuts lately.

Brazil nut ingredients

1 cup Brazil nuts, soaked 4-6 hours

4 cups water

2 T coconut oil

1 t lecithin

1/4 c agave (I used a few drops of stevia)

1 t vanilla bean extract

1 pinch sea salt

I really enjoy this milk.  I like it better than almond milk.  I would also like to make sesame seed milk.  That is not in this book, but there are plenty of recipes online or I could make it similar to this recipe but replace sesame seeds.

I am off to bed, I am exhausted.  My kitchen is a mess and I have so many dishes, but I will deal with them tomorrow.  Can’t wait to hit my bed!

Day #67 “Fried” Jicama pg. 155 entertaining in the raw

I have been staring at my computer for the last hour. Not really doing anything too exciting, just looking on Facebook and MySpace. I found an article by David Wolfe titled “Getting The Best Perspective Ever on Health and Nutrition” that was posted on the Huffington Post. I love the title, it is the way of David Wolfe. Everything he does is always the “Best”. He says that it is and I believe that it is. I love his charisma and passion for this lifestyle. The article is an easy read and it’s always exciting for me to hear new ideas from him.

I also have been flipping through my pages of entertaining in the raw, I decided to make “fried” jicama this evening. I had a jicama here, this is really unexpected. I didn’t plan for this at all. I have all the ingredients, by the blessing of God. I really wasn’t too concerned tonight about making my recipe. I knew it would get done. I figured if I didn’t have any ingredients I would have Jason pick something up from Sweetbay and if worse came to worse I could always go up to Rutabaga’s. This recipe sounds so great. By the ingredients listed I think they should resemble french fries when they are done. If they really taste like French Fries then I am going to make raw ketchup to go with them. Yummy!

This is one of the reasons I love his recipe book so much. You can make a meal out of just one of the recipes from his meals. Most recipes have at least 3 different recipes within the recipe.

Fried Jicama ingredients
julienned jicama
olive oil
salt
nutritional yeast
1/3 cup flax meal

I have to dehydrate them for 24-48 hours. I am going to let my kids try them. I am hoping they will like them. I hope I do too.

I am off to bed for tonight. I have been studying so much the last 2 days, the test is done and I feel alot less stressed. I don’t feel like I got an A, but I am hoping I did. I did the best I could. That is certain!

More is to be got from one teacher than from two books. This is so true for me, Jason has helped me so much. If he didn’t help me I would not have learned as much as I did. He is a true teacher! And the best partner ever!

Day #66 Thai Salad pg. 86 everyday raw

This was a fantastic dinner! I tried the dressing last night on my finger tip and I thought it was too salty. I had the salad tonight and it was a perfect blend of flavors. I used spinach only instead of mixed greens.

Thai Salad
2 handfuls mixed greens, super big
1/2 cup finely diced pineapple (I didn’t eat the pineapple because I am cutting out sugar)
1/2 cup soaked sundried tomatoes
1 avocado
sea salt (I left this out!)
1/2 red bell pepper, cut into long strips
1/2 cup thinly sliced young coconut meat
1/2 cup chopped curried cashews (I didn’t eat these)
1/2 cup creamy thai dressing

The mixture of ingredients was perfect for my taste buds. I studied all night and had this on my break. Jason tried some of my salad, but he was not hungry for a salad. So we ate together, but we didn’t sit down at the table because I had to finish reading Chapter 5 and practice test questions, so I can get an A on my test tomorrow night.

I still have dressing left over, so tomorrow I will bring some to work and eat it with a big salad of lentils, red peppers, cucumber, tomatoes, and onion on top of romaine lettuce. I have been living on spinach and kale lately so I will buy some romaine tomorrow or maybe I’ll finish up my kale. This dressing will be the perfect addition to the salad:)

Better head off to bed now I am tired and I have to get rest for my test tomorrow.

Day #65 Creamy Thai Dressing pg. 86 everyday raw

I was blessed tonight with Jason’s presence in my Anatomy and Physiology class! My test is on Wednesday and I am studying for it now. I took a break to make my salad dressing. It is good but a bit on the salty side for me. I am sure it will be fantastic on the thai salad tomorrow evening. Jason gets home early from school so we will have our dinner together. The dressing has sesame oil in it, so it tastes sweet and salty. I really am enjoying the taste of sesame oil lately. Doing this project has made me realize I do love sesame oil, especially with lime juice.
Dressing ingredients
sesame oil
nama shoyu
olive oil
lime juice
maple syrup ( I used stevia in mine)
red chili flakes
sea salt
cashews

Tomorrow I will make the thai salad to go with the dressing with curry cashew topping. It will be another romantic dinner for us!
