Day #337 White Corn Tamale, Serrano-Chile Spiced Portobello, Raw Cacao Mole and Guacamole pg. 88 entertaining in the raw

NOTE* Photos are below. I was in the kitchen for a long time today. I am getting closer to the end of this project. I can feel the process as each ingredient is placed into the recipe. I can’t believe I have gotten this far! Day #337! I feel like I could do this forever! I love whipping up these recipes in the kitchen. This recipe took some time to make, but it was worth it.

Tamale Ingredients
white corn kernels
tomatoes
bell pepper
sun0dried tomattoes
pine nuts
cashews
sea salt
nutritional yeast flakes
red onion
cilantro
garlic
lime juice

I placed corn, tomatoes, and peppers in a bowl. I placed the rest of the ingredients in the food processor and blended it until it was smooth. I added all ingredients together in bowl and stirred up all ingredients.

Portobello Ingredients
portobello mushrooms
olive oil
serrano chile
salt and pepper

I tossed all the mushrooms together with olive oil, serrano chile and salt. I placed them on the Teflex sheets and now they are dehydrating until tomorrow’s big meal:)

Guacamole Ingredients
avocados
cilantro
lime juice
sea salt
scallion
red chile
jalapeno

I placed all ingredients in a bowl and mashed with fork.

The corn husks were soaked for 2 hours and the assembly began at 9 am. I didn’t realize that I had to dehydrate the complete Tamales in the dehydrator for a few hours, so I got started as soon as I saw the Assembly directions. I followed the instructions pretty closely, I just changed a few things.
My mushrooms came out so dry, so I added them to the Tamale mixture. I made half of the Tamale recipe and I placed 1/4 cup into the Corn Husks. I had enough to make 12 corn husks. I didn’t want to force 1/2 cup tamale mixture into the corn husks, so that is one thing I did change. The directions say to dry the corn husks and place the mixture on the center of the corn husk. The small side of the corn husk should be on top.

Then I folded the bottom up towards the top.

Then I folded the sides over and wrapped a strip of one of the corn husks and I tied it.

These are so adorable. This recipe was perfect for the gathering today. I am glad I spent some time on this recipe because ALL of the ladies really made everything so beautiful! It’s hard to keep up with all of them;-).

Tamales and Cacao Mole

I forgot the Guacamole at home. I was in a hurry to go. I had a hard time finding something to wear today. I tried on so many outfits. I just wanted to be comfortable, so I finally found an outfit! I headed out the door and didn’t realize what I forgot. I remembered everything else, so I give myself points for that!

Day #335 Ocean Vegetables and Squash Noodles with Oyster-Mushrooms Escabeche, Faded Green Caviar and Miso Tahini Sauce pg. 74 entertaining in the raw

What an elaborate meal and I have to say somewhat incomplete. The ingredients were very difficult to get. It is nearing the end of my project and I can’t just run up to the store anymore and find all the ingredients I need. I don’t know where I could’ve found the pink seaweed or the light green seaweed.

I had to make due with the wakame, hijiki, kelp and arame. I was able to find these in the local health food store, but the others I couldn’t. That is one issue that I continue to have, finding all the ingredients. I did my best and I was able to find all of the other ingredients.

My favorite part of this entire meal was the final product of the squash noodles that were dehydrated. I didn’t have to dehydrate them any further. They were completely crisp after 24 hours. They are such a beautiful and exotic touch to this meal. I will use the noodles in other dishes a creative flair. What a delicate and economical way to dress up a meal:).

Vegetable Ingredients
pink seaweed (tosaka) *I omitted

black and white sesame seeds

carrot

Escabeche Ingredients
olive oil
apple cider vinegar
ground vinegar
oregano
salt
black pepper
oyster mushrooms

I won’t remark to much about the taste of this meal. I just can’t eat this seaweed meal. I think the presentation offers me much more than the flavor…”Sorry Matthew”. If you do like seaweed you will probably like this meal. I do enjoy Nori, Dulse and Kelp if it is blended in something or sprinkled on salad. Of course Nori is my favorite although I don’t think it is nutritionally compatible with the other seaweeds. Jason makes raw sushi (parsnips not fish) and I make nori rolls with veggies, avocados, sprouts, and pates.

Not all of the recipes agree with me, but I have to say about 98-99% of the last years recipes have been amazing and I have made many of them again and again!  As I have said over and over again, I am so fortunate to have been able to do this project.  I have been blessed with finances, support, ability  and commitment.  It has made me a better person:)

Day #334 Noodles and Sauce pg. 74 entertaining in the raw

I just got home and I am not looking forward to cleaning my kitchen. It’s late and I have been gone all day. I have been trying to stay away from the computer as much as possible. I realized that I am the computer much more now, because I am not working and I don’t feel it’s the best thing for me, so I stayed away from it today. I did listen to an interview with David Wolfe and Dr. Mercola on YouTube. I was at the gym doing cardio and decided that I would listen to it, I love the iPhone. So, the interview got me through the horrendous elliptical. It is not always bad, but I just really didn’t feel like being there today. I like to go in the morning and I missed my time today, but for good reason, I had a meeting with my friend, Mary, who sells Shaklee. I learned so much about the company and I researched them today.

Well, as for my recipe, here it is…

Noodles Ingredients
yellow squash, cut into long noodles with a spiralizer
salt
olive oil

Sauce Ingredients
raw agave
tahini
water
miso
lemon juice

I tossed the noodles with a bit of olive oil and salt. I formed pasta into spiral bunches on the Teflex sheet and now they are dehydrating. Tomorrow I will take them off of the Teflex sheets and dehydrate them another 24 hours.

Sauce was blended in the Vita-mix.

I made many recipes today and my kitchen is a disaster now. I still have to make another recipe for tonight, I don’t know what I will make, but I need to decide soon. I leave in 4 hours. I have been laying around too much today, just low on energy. I have been eating too much watermelon and chocolate cake from the other day. This project allows too much “Junk” in my house. Oh well, I would find a way to have high fat desserts either way:)

Day #332 Cake pg. 106 entertaining in the raw

This is similar to the chocolate cake that I made the other day, I will start the cake today and make the rest of the ingredients tomorrow.

Cake Ingredients
fine cashew flour
cocoa powder
sea salt
raw agave
water
vanilla extract
cinnamon

I mixed the dry ingredients in a large bowl. I added the remaining ingredients; I mixed with my hands. I lined 2 pans with parchment. I gently pressed the cake into the pans, they are in the dehydrator.

Tomorrow is the potluck and I will bring this to the potluck. I am looking forward to seeing everyone this month.

Day#331 Chocolate Cake with Sweet Cherries, Spiced Cinnamon “Ice Cream” and Cayenne-Cacao Syrup pg. 102 entertaining in the raw

Happy Father’s Day!

Cherries Ingredients

Combined all ingredients and dehydrate 4 hours.

Syrup Ingredients

Everyone liked this dessert tonight. It was a nice blend of the cacao and carob. The cake was reminiscent of the Little Debbie Brownies that I have eaten in the past. It was moist and not too sweet. I really enjoyed this dessert. The ice cream was okay, I was just craving chocolate, so ate 2 pieces of the cake with syrup on it. The syrup and the ice cream did have some heat in the recipes, but I didn’t really taste it. But I have been drinking ginger, lemon and cayenne water so maybe that is why I didn’t taste it.

I think the presentation was so pretty in the light:)

This is mixed in food processor.

Paratha Ingredients
flax meal
walnuts
cashews
squash
salt
black pepper
olive oil
nutritional yeast
cumin
black sesame seeds

I made this on Oct 3 but I had to remake it again.

Spiced Cucumber Ingredients
cucumber
cayenne pepper
cumin
lime juice
sea salt

I made this on Oct 4, but I had to remake it here again.

I originally started this recipe back in October but never did the Chutney. So I had to remake this. I have done that with some recipes. I either ate the part of the recipe, or I couldn’t find one of the ingredient then the recipe went bad.

Most recipes I have done in sequence. Entertaining in the raw has more steps to each recipe so it has worked out that I make one part a day.

Today I also made the eggplant bacon. I have been making several of MK’s recipes along side of the recipes I haven’t done. A few of my faves are chili, empanadas, and eggplant bacon. I am making Jason the chili for Father’s Day tomorrow along with the complete recipe from yesterday. Hope he likes it!

Day #329 Chocolate Cake and Spiced Cinnamon “Ice Cream” pg. 102 entertaining in the raw

Well, after all day thinking my dog had disappeared he was hiding in my closet. Unbelievable. I called for him so many times and he never clawed at the door or anything. I was so sick last night! I was going to check in my closet, but a gust of wind from the terrible storm blew open my front door, so I had to close it, and then I just forgot to look in there. After I picked the kids up at my parent’s house, Sabby went into my bedroom and was talking to himself, and said, “Sirius, where are you?” then he heard a noise from my closet. You have no idea the joy I felt when I learned it was him! I need Sirius in my life. He is such an incredible friend! He is definitely the best walking partner I have ever known. I am filled with Gratitude!

I decided to make this recipe for Father’s Day. It is sounds spicy and sweet. I will definitely try the ice cream I have been craving ice cream! This will be a very spectacular dessert for everyone!

Cake Ingredients
cashew flour
cocoa powder
maple syrup
agave
water
sea salt
vanilla extract
cinnamon

Two pans were lined with parchment paper and I pressed the mixture in to be dehydrated. These will be cut with a cookie cutter and served individually.

Ice Cream Ingredients
young coconut meat
cashews
agave
cinnamon
cayenne
ancho chile powder

I put all ingredients into the Vita-mix and then put into the ice cream maker according to the instructions. I am getting to be a pro at making ice creams.

I was going to do the cherries, but I will wait until Sunday so they are warm:)

Day #328 Cucumber-White Grape Gazpacho pg. 59 everyday raw

I am sitting here in total disgust with myself and life, my dog has been missing since this morning and I really just want him here again! I have been to the animal shelter, put up signs, drove around my neighborhood numerous times, and just walked in thunder! Sirius hates thunder, and I really just want to find him…NOW!

It was a great day, then I came home to him missing. He got out through a cracked door. I am so sad I really just can’t think about anything else. But here is the recipe….

I picked one of the recipes from Everyday Raw today, I have more recipes than I thought, I have been so focused on Entertaining in the Raw that I thought I was almost done with this one, but apparently not!

Cucumber-White Grape Gazpacho Ingredients
cucumbers
tomatillos
white grapes
ginger juice
salt and ground white pepper

I mixed all ingredients in a large bowl, then placed 3/4 of the ingredients into the food processor until it was smooth. I added it all back to the bowl with remaining ingredients. This will be my breakfast tomorrow.

Day #327 Fortune Cookies pg. 228 entertaining in the raw

These were easy again to make. I have made these before, and this time I really tried to make them perfect. Although they don’t look exactly like MK’s, I do think they at least appear as if they are fortune cookies.
