Day # 109 Thai Cucumber Salad pg. 232 entertaining in the raw

I just made Jason a beautiful thai salad, even though he is not here to enjoy it. It is a quick unique salad. He doesn’t care too much for cucumbers but I know he will like this salad. I took the skins off, so they won’t taste too bad to him. I love cucumbers.
Salad
1/4 cup roughly chopped basil
2 medium cucumbers, quartered lenghtwise and thinly sliced
1 head butter lettuce, torn into small pieces
1 yellow bell pepper, julienned
1 t salt
1/4 cup mint leaves
Dressing
3/4 cup sesame oil
1/2 cup nama shoyu
1/4 cup olive oil
1/4 cup lime juice
1 T maple syrup
3 thai chiles (I used 3 t red chile flakes)
1/4 cup cashew butter
Water to thin
Garnish
1/3 cup chopped cashews
2 T sesame oil
1/4 cup diced red pepper
Can’t wait until he gets home. I am sure he will eat the rest of the lasagna and this wonderful salad. We had the torta today for lunch and he loved it:)
