Day #339 Roasted Sweet Pepper Soup, Basil Manti, and Hazelnut “Yogurt” pg. 148 entertaining in the raw

I just got back from Orlando. I had to get my iPhone fixed and we attempted to buy Sabby his new iPad. He achieved one of the highest honors today at Kumon, G by 3! He did amazing and he is the first 3rd grader to achieve Algebra by Third Grade at the Citrus County Kumon Center! We are so proud. He has been waiting for months to receive his special prize. He started doing Kumon before he started Kindergarten and has been working diligently since. He works hard everyday and amazes his Father and I! When we went to the Apple store, we found out that they were sold out of all the iPads and all the surrounding stores didn’t have any either. He doesn’t want to wait a week to get one, so we will try to find one tomorrow.

I made all parts of the recipe before I left today, and I will put them together tomorrow. We ate at Sweet Tomatoes, so we are not interested in trying anymore food tonight. I could put it together, but the little baskets will get all soggy and I don’t think they will be good tomorrow. All 4 recipes are waiting in the refrigerator until tomorrow.

Soup Ingredients
cashews
water
coconut meat
salt
pepper
lemon juice
nutritional yeast
cayenne pepper
Aleppo Pepper Spice
red bell peppers (dehydrated for 2 hours)

All ingredients were blended until smooth.

Filling Ingredients
I made this back in August too. It was so delicious!

Dinner tomorrow will be so delicious!

Today was one of the best days we have had. Even though Jason is still working and going to school, he seems to be a more excited about getting to the end of Nursing school and starting his new career! I am so proud of him!
