I am ending the month of November with the best smoothie ever! I love bananas, almonds and cacao. I really made it for Jason. He was hungry for something quick. He had a green smoothie then this decadent treat.

Ingredients
4 cups frozen bananas
1/2 cup cacao nibs
1/4 t cinnamon
2 cups almond milk
1/4 cup agave
He loved it. I personally like my smoothies a bit on the “ice creamier” side. He usually adds more liquid to his smoothies. So this was perfect for him.
I think these ingredients would make really delicious popsicles for kids. I know my kids would love them. The whole smoothie is gone so I will have to make this again for the kids. I made the recipe too late for them to try it. They are sleeping, God bless their souls. They were super tired.
I am going on a medicinal plant walk tomorrow. So hopefully I will learn which plants I can make a salad out of. I am going with D’ and Christian. It should be perfect weather.
I am really sleepy, I did almost 40 miles on the bike today. Not all at once, but throughout the day. I am ready to take our bike trip up the coast of Florida. I love biking.

Today’s meal is simply divine. It looks elegant but so simple. I am waiting for Jason to get home so he can try it. I am not hungry. I have had a long day. I worked today, then went to the gym. I had to return to work to put a few things away then the boys and I went to the beach to watch the sunset. It was stunning. The sky was clear and we watched the sun enter the horizon and we all said goodbye. We saw dolphins coming to the surface of the water. It was a perfect painting by God. I love the sunset. I am so grateful I finally made it over there to see it. It’s been calling to me:)
Wrappers Ingredients
coconut meat
spinach juice
basil leaves
salt
ground black pepper
The wrappers require the blending in the Vita-mix. Then I lay the mixture on parchment paper, and dehydrated for 3-4 hours. After they were dry I cut them with scissors to make them square.
Cheese Ingredients
macadamia nuts
lemon juice
nutritional yeast
shallot
salt
The cheese ingredients were placed in the food processor then crumbled onto the parchment paper. I dehydrated it for 4-6 hours.
I didn’t want to dehydrate the tomatoes too. I thought I would keep them fresh. I placed the basil leaves on top of the cheese. I love the smell of fresh basil. These plants just keep thriving. I don’t understand it. I hardly ever water them. Maybe Jason is watering them. Either way, they are beautiful herbs.
I hope he likes these wraps. I will find out when he arrives.

Jason did like them. I love when he eats my food and he took the lovely pic for me.

I had some extra carrot pulp from the pumpkin pie with thyme, so I decided to make the carrot bread.
Carrot Bread Ingredients
1 cup carrot pulp
2 T flax, ground
1 T nutritional yeast flakes
salt
In a bowl combine all ingredients and add water if needed. Make into a batter and lay out of Teflex Sheets in bun shapes. Dehydrate at 115 degrees for 4-5 hours. Should come out similar to bread. Hard on the outside and moist on the inside. It is delicious right out of the dehydrator. I will make this bread again. I got this recipe online on Sparks recipes. I love that it is low calorie and a recycled dish. I don’t like to waste the pulp. What a great easy way to use it up. And an awesome way to get your fiber and flax:)

I made two halves this morning for breakfast with spinach and tomato. Delicious!

I just got back from a Thanksliving meal with friends, D’Adjoa, Marsha and Theresa and of course my significant other Jason. He is such a trooper. He is always there for me. It was such a rawesome meal. Everybody brought at least 3 different things to share. It was a huge feast. A few people didn’t make it, but it was the way it was supposed to be. We all got to talk to eachother and really get to know each other better. What a blessing they all are to me!
I really feel sick in my belly from eating too much food. I haven’t eaten that much food in a while and of course I had to try both pies I made. UUhhhh I have not been eating sugary things at all. The food was just too good to pass up. The Pumpkin Pie with Thyme was a real hit. Everyone loved it. There is only one piece left. I will post pics hopefully tomorrow. I made a few things today for the gathering. I will post the pics and recipes.
Tonight I decided to make those chocolate wafers that I wanted to make for the vanilla mint flan that I made a few days ago.
Sweet Cacao Sauce Ingredients
cacao nibs
agave
coconut oil
I mixed the ingredients then spooned them out with a Tablespoon. They will harden in the freezer then I will add the vanilla mint flan in between the wafers.

The farther I get into this project I know that this is the right way. I adore the people I have met and what the GOOD LORD has taught me in all of my journey. I am grateful for what I have learned and what I will learn about myself and others. I love preparing raw food and I am so fortunate to have people in my life that share the same passion.

Today went by so quick. I made it to the gym today, then came home and did house work then studied. Wow exciting day..well I am grateful that I got to do the things I needed to do! Anyway, the boys got to hang out with their friends so the day wasn’t wasted at home. I always feel bad if they are only playing video games and not around anyone. I was able to study for about 3 hours, and finally realized how late it was, so I decided to make the filling for the pumpkin pie.
I juiced carrots and then added all ingredients to the Vita-Mix. Another winning recipe according to my boys. They kept wanting more. I know everyone will like it tomorrow. I wanted to make little leaves out of squash to decorate the pie, but I don’t have any. So I guess it will look like a plain pumpkin pie. This pie filling has thyme in it but I couldn’t really taste it. The mix of flavors is perfect. I like the flavor better than the pumpkin flan.
Filling Ingredients
cashews
maple syrup
agave
coconut oil
carrot juice
vanilla
salt
cinnamon
nutmeg
thyme

I still have to make a nut loaf, and an apple cranberry cheesecake for tomorrow’s gathering. So I am going to get started on it.

Happy Thanksgiving! Today was a relaxing day filled with love, family and food (My 3 favorite things). Cathy came over today and made her first raw vegan meal. She found the recipe online. The recipe was parsnip and pine nut “potatoes”. She came over here to make them because she didn’t have the equipment to make it at home. She peeled the parsnips and I chopped them up and placed them into the Vita-mix. Then she added water, pine nuts that were soaked, garlic, and braggs liquid aminos. The recipe turned out delicious. I think it’s great she is looking into raw food. I know what it has done for me, so it will be awesome to see if she continues to delve into the raw living food world.
Christian made gravy to go with his Tofurkey today. He was looking at the package and asked if he could make the gravy. Of course I encourage him to make recipes whenever he asks. He got everything ready and it came out wonderful. I am proud of him.
For the Thanksgiving meal I made the stuffing that D’Adjoa brought to the potluck last Tuesday. It turned out yummy of course. I still have some left so I am sure we will eat some at the Gathering on Saturday. It reminds me of chicken salad or tuna salad.
I decided to make the crust for the pie I am making for the Thanksliving dinner we are having on Saturday. I soaked the pecans last night and dehydrated them all day. Tonight I food processed the pecans first then added maple syrup, coconut oil, dates and sea salt. Jason covered a pie plate for me with plastic wrap and I filled it with the pie crust. I placed it in the dehydrator and it should be done tomorrow night. It is rather thin so I don’t think it will take long to dehydrate.
Crust Ingredients
pecans
maple syrup
coconut oil
date paste
sea salt
I also wanted to name the top 5 meals and top 5 desserts in the last 4 months.

I was thinking today that tomorrow will be the 4 months since I started my dedication to my year’s worth of making a recipe a day. I am almost 100% raw most days and some days when I am not I wonder why I make poor decisions. My body is cleaner than it ever has been and I feel like I just want to keep improving every part of me.
Tonight I decided to make the vanilla mint flan. The directions say to put the flan in ramekins but I am going to do something different. I am going to make a chocolate sauce and chop almonds and make wafers. I am going to freeze them and when they are hard I will put the flan between the wafers and make little mint ice cream cookies out of them. It will be different from the recipe but I don’t think it will take the taste away from the flan itself. I think it will enhance the flavor. I was reminded tonight of a thin mint pie I made at Rutabaga’s. These little wafers will be similar to thin mints. I will post the recipe that I use when I make them.
Vanilla Mint Flan Ingredients
1 1/2 cups cashews, soaked 1-2 hours
1/2 cup young coconut meat
1/2 T vanilla extract
1/4 t sea salt
1/4 cup agave
1/4 cup + 2 T coconut oil
1/4 t peppermint oil
I blended all ingredients in Vita-Mix until smooth. I placed it in a glass jar until I make the wafers.
Tomorrow is Thanksgiving and I have so much to be thankful for. I am going to my parents to have dinner. I am bringing over some raw yummies for all to share. I have nuts soaking tonight for stuffing that I will make tomorrow morning. I thought about bringing a dessert but I am not sure what to bring. I might make ice cream. Maybe pumpkin flavor. Ahhh I love the ice cream maker. I will figure out which dessert I will make tomorrow morning.
It is supposed to be chilly tomorrow. Hopefully I will be able to take a walk and do my meditation. I will be with my family so it will be a blessed day!
Thanksgiving Day comes, by statute, once a year; to the honest man it comes as frequently as the heart of gratitude will allow. ~Edward Sandford Martin

It is early in the evening and I have been studying for quite a while. My two exams are coming up for A & P so I am starting to study earlier than usual. I woke up this morning rather early. I generally sleep 5 to 6 hours now, not because of raw food, just stress, I feel like my body is being taxed. I have gone through many emotions within this last 4 months and many things are becoming clearer to me as time goes on.
I have discovered many things: who I am, where my relationships stand with many friends and family, what my goals are, and my spiritual relationship with my Creator. I have decided that I wish to cut down on as much sugar as I can stand. I feel like my energy might be low at this present time but I also feel I am having a breakthrough. My energy is stable and I am not craving sugar and more sugar. Through raw food healing I have come closer to an awareness of myself that I have never thought possible. I am gaining a profound relationship with my Creator. I wish to be the purest that I possibly can be. I meditate everyday and if I miss I get depressed and feel like I am missing something. I exercise at least once a day for 5 out of 7 days of the week. This quest to make a recipe a day really has shown me that there are no limits in my life. If I wish to accomplish something I must make the decision and that is step number 1 and to follow through with the decision is to think back and feel the feelings and emotions that I had when prompting the decision at first and dedicating myself to it.
I absolutely love to prepare raw food and I wish to keep it a part of my life Forever! Everyday I make strides to learn more about healthy living and coming to my highest level of spirituality at this present moment.
This recipe was simple to make and it is sweet enough to have a few small bites then my sweet tooth was satisfied.
Vanilla Creme Ingredients
young coconut meat
agave
vanilla bean
lime juice
coconut oil
sea salt
Doing what you love is the cornerstone of having abundance in your life.
Wayne Dyer
Abundance is a word that I keep hearing over and over again this month. With Thanksgiving in a few days, many of us choose to count the blessings in our life and see the abundance that God has given us. I truly feel that if I am at one with myself and God then my life will overflow with Abundance. The closer I am to God the more I recognize and appreciate the littlest things. Today, I was admiring the way a cardinal just goes about his business looking for food. I watched the cardinal for about 5 minutes and for those 5 minutes I felt harmonious. It reminded me that we are all one with every creature, and living being on the planet! And that God will not let us go without!
Thank you, Thank you, Thank you my Father, Creator!
