Day#342 Black and White Dumplings pg. 108 entertaining in the raw

July 1, 2010

I am hoping that these turn out good this time. I didn’t have black sesame tahini last time I made these wraps. I will know tonight if they are good:).

Day #341 Black Olive Pesto pg. 76 everyday raw

June 30, 2010

Matthew Kenney Project June 2010 037

Black Olive Pesto on Ani Phyo’s Sesame Bread

Well, this is the last day of June and tomorrow starts the very last month on this project! I am excited to almost be at the end of it. I counted the recipes and I think I have only 2 left in Everyday Raw and if I counted correctly I only have 5 recipes left in Entertaining in the Raw. I was busy helping Sabby with his homework while I was counting the remaining recipes, so I may be wrong. I am sure I will stretch out the recipes to try to keep this project going for an entire 365 days. If not, at least I can say that I did ALL the recipes. Maybe I will get some more dessert recipes:).

Tonight’s recipe was so delicious! I could have sat on the couch and ate the entire batch. I stopped myself because that would’ve caused me to feel very ill. We had chipotle burgers tonight and I put about 1 Tablespoon of the Black Olive Pesto on my burger with Ani Phyo’s Black Sesame Bread (which I made with white sesame seeds)! An absolute perfect meal together. I highly recommend this pesto. I am going to give my father some when he gets here. He is picking up a movie from us.

Black Olive Pesto Ingredients
1 cup sun-dried tomatoes, soaked 1-2 hours and drained
1 cup pine nuts
2 cups kalamata olives, pitted
2 cups fresh basil leaves, packed
1 cup fresh parsley
1/4 cup olive oil

Combine sun-dried tomatoes, pine nuts, and olives in a food processor; pulse until chunky. Pour into medium bowl and set aside. Add basil, parsley, and olive oil to food processor; pulse to form a chunky pesto. Add basil mixture to bowl with sun-dried tomato mixture and mix well.

If you like Olives, you will absolutely love this recipe. I have to say it’s the best olive recipe I have ever made in my life!

Well, my father is here so, off I go!

Day #340 Zaru Somen and Sweet Dashi Sake Broth pg. 212 and Photos of Roasted Sweet Pepper Soup pg. 148 entertaining in the raw

June 29, 2010

Matthew Kenney Project June 2010 033

According to Wikipedia, Sōmen () are very thin, white Japanese noodles made of wheat flour. The noodles are usually served cold.  My son loves Udon Noodles.  These are different than Udon.  Sōmen is stretched Udon is cut when making the noodles.

Broth Ingredients
1 cup water
1 cup nama shoyu
2 T dried dulse
1 T dried wakame
1/4 cup brown rice vinegar
2 T agave
1 T fresh lime juice

First 4 ingredients were blended until smooth. I strained them and added the remaining ingredients.
I then added the somen.

Somen Ingredients
2 cups young thai coconut
2 T black sesame seeds
1 1/2 t shichimi spice
2 T finely sliced scallion

I made the thai coconut meat very thin to resemble “noodles”. I then sprinkled the remaining ingredients over the somen and broth.

This meal was too salty for me, although the presentation made my mouth water.

We found Sabby his iPad. It’s been a long day, but now we are home and setting up the iPad so he can try out all the apps and Netflix. He is super excited!

Here is the Sweet Pepper Soup:

Day #339 Roasted Sweet Pepper Soup, Basil Manti, and Hazelnut “Yogurt” pg. 148 entertaining in the raw

June 28, 2010

I just got back from Orlando. I had to get my iPhone fixed and we attempted to buy Sabby his new iPad. He achieved one of the highest honors today at Kumon, G by 3! He did amazing and he is the first 3rd grader to achieve Algebra by Third Grade at the Citrus County Kumon Center! We are so proud. He has been waiting for months to receive his special prize. He started doing Kumon before he started Kindergarten and has been working diligently since. He works hard everyday and amazes his Father and I! When we went to the Apple store, we found out that they were sold out of all the iPads and all the surrounding stores didn’t have any either. He doesn’t want to wait a week to get one, so we will try to find one tomorrow.

I made all parts of the recipe before I left today, and I will put them together tomorrow. We ate at Sweet Tomatoes, so we are not interested in trying anymore food tonight. I could put it together, but the little baskets will get all soggy and I don’t think they will be good tomorrow. All 4 recipes are waiting in the refrigerator until tomorrow.

Soup Ingredients
cashews
water
coconut meat
salt
pepper
lemon juice
nutritional yeast
cayenne pepper
Aleppo Pepper Spice
red bell peppers (dehydrated for 2 hours)

All ingredients were blended until smooth.

Filling Ingredients
I made this back in August too. It was so delicious!

Dinner tomorrow will be so delicious!

Today was one of the best days we have had. Even though Jason is still working and going to school, he seems to be a more excited about getting to the end of Nursing school and starting his new career! I am so proud of him!

All ingredients were blended and placed in refrigerator until tomorrow.

I will finish this recipe tomorrow.

Now onto updating my Tamale Recipe photos.

Day #337 White Corn Tamale, Serrano-Chile Spiced Portobello, Raw Cacao Mole and Guacamole pg. 88 entertaining in the raw

June 26, 2010

NOTE* Photos are below. I was in the kitchen for a long time today. I am getting closer to the end of this project. I can feel the process as each ingredient is placed into the recipe. I can’t believe I have gotten this far! Day #337! I feel like I could do this forever! I love whipping up these recipes in the kitchen. This recipe took some time to make, but it was worth it.

Tamale Ingredients
white corn kernels
tomatoes
bell pepper
sun0dried tomattoes
pine nuts
cashews
sea salt
nutritional yeast flakes
red onion
cilantro
garlic
lime juice

I placed corn, tomatoes, and peppers in a bowl. I placed the rest of the ingredients in the food processor and blended it until it was smooth. I added all ingredients together in bowl and stirred up all ingredients.

Portobello Ingredients
portobello mushrooms
olive oil
serrano chile
salt and pepper

I tossed all the mushrooms together with olive oil, serrano chile and salt. I placed them on the Teflex sheets and now they are dehydrating until tomorrow’s big meal:)

Guacamole Ingredients
avocados
cilantro
lime juice
sea salt
scallion
red chile
jalapeno

I placed all ingredients in a bowl and mashed with fork.

The corn husks were soaked for 2 hours and the assembly began at 9 am. I didn’t realize that I had to dehydrate the complete Tamales in the dehydrator for a few hours, so I got started as soon as I saw the Assembly directions. I followed the instructions pretty closely, I just changed a few things.
My mushrooms came out so dry, so I added them to the Tamale mixture. I made half of the Tamale recipe and I placed 1/4 cup into the Corn Husks. I had enough to make 12 corn husks. I didn’t want to force 1/2 cup tamale mixture into the corn husks, so that is one thing I did change. The directions say to dry the corn husks and place the mixture on the center of the corn husk. The small side of the corn husk should be on top.
Matthew Kenney Project June 2010 017
Then I folded the bottom up towards the top.
Matthew Kenney Project June 2010 018
Then I folded the sides over and wrapped a strip of one of the corn husks and I tied it.

These are so adorable. This recipe was perfect for the gathering today. I am glad I spent some time on this recipe because ALL of the ladies really made everything so beautiful! It’s hard to keep up with all of them;-).

Tamales and Cacao Mole

I forgot the Guacamole at home. I was in a hurry to go. I had a hard time finding something to wear today. I tried on so many outfits. I just wanted to be comfortable, so I finally found an outfit! I headed out the door and didn’t realize what I forgot. I remembered everything else, so I give myself points for that!

Day #336 Cacao Mole pg. 88 entertaining in the raw

June 26, 2010

Today is the first step of the meal I will bring to the R.L.P.L (Raw Ladies Pot Luck).  I have made a recipe similar to this before but it was in Everyday Raw.  I didn’t have the Cornhusks, so I used lettuce leaves, but I found corn husks this time:).  Yippy!

Cacao Mole Ingredients
chipotle chiles
red onion
garlic
sunflower seeds
almond butter
raisins
olive oil
water
agave
cumin coriander
salt
cayenne
cacao powder

Blended in Vita-mix.

I will finish the rest of this recipe tomorrow.

I just got home from the gym and I am wiped out! It was the hardest arm workout since I started back at the gym. I LOVE it!  Next, I am heading to my parent’s house to visit, then shopping! I have so much to do:).

Day #335 Ocean Vegetables and Squash Noodles with Oyster-Mushrooms Escabeche, Faded Green Caviar and Miso Tahini Sauce pg. 74 entertaining in the raw

June 24, 2010

Matthew Kenney Project June 2010 016
What an elaborate meal and I have to say somewhat incomplete. The ingredients were very difficult to get. It is nearing the end of my project and I can’t just run up to the store anymore and find all the ingredients I need. I don’t know where I could’ve found the pink seaweed or the light green seaweed.

I had to make due with the wakame, hijiki, kelp and arame. I was able to find these in the local health food store, but the others I couldn’t. That is one issue that I continue to have, finding all the ingredients. I did my best and I was able to find all of the other ingredients.

My favorite part of this entire meal was the final product of the squash noodles that were dehydrated. I didn’t have to dehydrate them any further. They were completely crisp after 24 hours. They are such a beautiful and exotic touch to this meal. I will use the noodles in other dishes a creative flair. What a delicate and economical way to dress up a meal:).

Vegetable Ingredients
pink seaweed (tosaka) *I omitted
hijiki
wakame
kelp
arame
black and white sesame seeds
ginger
beet
carrot
zucchini
jicama

Escabeche Ingredients
olive oil
apple cider vinegar
ground vinegar
oregano
salt
black pepper
oyster mushrooms

I won’t remark to much about the taste of this meal. I just can’t eat this seaweed meal. I think the presentation offers me much more than the flavor…”Sorry Matthew”. If you do like seaweed you will probably like this meal. I do enjoy Nori, Dulse and Kelp if it is blended in something or sprinkled on salad. Of course Nori is my favorite although I don’t think it is nutritionally compatible with the other seaweeds. Jason makes raw sushi (parsnips not fish) and I make nori rolls with veggies, avocados, sprouts, and pates.

Not all of the recipes agree with me, but I have to say about 98-99% of the last years recipes have been amazing and I have made many of them again and again!  As I have said over and over again, I am so fortunate to have been able to do this project.  I have been blessed with finances, support, ability  and commitment.  It has made me a better person:)

Day #334 Noodles and Sauce pg. 74 entertaining in the raw

June 23, 2010

I just got home and I am not looking forward to cleaning my kitchen. It’s late and I have been gone all day. I have been trying to stay away from the computer as much as possible. I realized that I am the computer much more now, because I am not working and I don’t feel it’s the best thing for me, so I stayed away from it today. I did listen to an interview with David Wolfe and Dr. Mercola on YouTube. I was at the gym doing cardio and decided that I would listen to it, I love the iPhone. So, the interview got me through the horrendous elliptical. It is not always bad, but I just really didn’t feel like being there today. I like to go in the morning and I missed my time today, but for good reason, I had a meeting with my friend, Mary, who sells Shaklee. I learned so much about the company and I researched them today.

Well, as for my recipe, here it is…

Noodles Ingredients
yellow squash, cut into long noodles with a spiralizer
salt
olive oil

Sauce Ingredients
raw agave
tahini
water
miso
lemon juice

I tossed the noodles with a bit of olive oil and salt. I formed pasta into spiral bunches on the Teflex sheet and now they are dehydrating. Tomorrow I will take them off of the Teflex sheets and dehydrate them another 24 hours.

Sauce was blended in the Vita-mix.

coconut oil
vanilla beans
sea salt

Sauce Ingredients
raspberries
vanilla
agave

Ice Cream Ingredients
cashews
coconut meat
agave
water
vanilla extract
red curry powder
sea salt

I made many recipes today and my kitchen is a disaster now. I still have to make another recipe for tonight, I don’t know what I will make, but I need to decide soon. I leave in 4 hours. I have been laying around too much today, just low on energy. I have been eating too much watermelon and chocolate cake from the other day. This project allows too much “Junk” in my house. Oh well, I would find a way to have high fat desserts either way:)

This is the plate I am bringing to the Gathering tonight!

Matthew Kenney Project June 2010 015

I am off to make another recipe!
